Old Fashioned Christmas Recipes
I like to research for the origin of things, especially cooking. It is often thrilling to see how our grandmothers did things. This time, I am searching for old fashioned recipes for Christmas, such as spekulatius recipe, stolen cakes, etc. I know there are some goodies that need a whole month of preparation before baking. Also, recipes you can store for a period. If anyone can oblige... My thanks in advance.

In a mixing bowl beat eggs, sugar and oil. Gradually add dry ingredients, then add carrots last. Fill greased or paper lined muffin cups 2/3 full. Bake at 325 degrees F for 25-30 minutes. Cool.
Beat cream cheese and butter. Add powdered sugar. Stir in coconut, pecans and raisins. frost the cupcakes. Yield: 24 cupcakes. Delicious!

Cream sugar, shortening, molasses, then add egg and buttermilk, mix well. Stir in dry ingredients together with vinegar-soda mixture. Divide dough into 6 balls, press each ball of dough into well greased 8 inch cake pan. Bake in 350 degrees F oven 15 minutes or until slightly browned. Remove from pans while warm and set aside to cool.
Drain dried apples, and sweeten to taste. Mash apples and add cream to make a thin paste. Spread apple mixture between cake layers, leave top plain. Let stand at least 12 hours before serving.

Combine milk, shortening and molasses in mixing bowl and let cool till lukewarm. Add yeast and then allow to stand for about 5 minutes. Then add raisins. Add flour, a little each time, and beating after each addition, until you have a stiff dough. It must be stiff enough to knead on a lightly floured board. Knead till smooth and elastic. Cover with a warm damp cloth and let sit in warm place until double in bulk. Punch down, and let rise to double in bulk again. Form into loaves with hands and place into well-greased pans. Cover and let the dough rise once more till double in bulk. Bake in a hot oven at about 400-425 degrees F for about 45 minutes or until done.

Combine sugar and flour. Add sour cream and cream cheese. Blend well. Put fruit in unbaked pie shell. Pour mixture over fruit. Top with crumbs. Bake at 425 degrees F for 15 minutes. Reduce heat to 350. Bake for 25 more minutes. Delicious! Note: Always have cream cheese and sour cream at room temperature before using!

Combine orange juice, sections, grated rind, sugar and cornstarch. Cook on low heat until clear. Add a little hot mixture to beaten egg yolks. Return to hot mixture, add beaten egg yolks and cook about 5 minutes longer. Remove from heat. Blend in lemon juice, butter or margarine. Pour into baked pie shell. Be sure filling and shell are both hot or both cold. Cover filling with meringue. Bake in 350 degrees F oven until lightly browned.
Seeing is believing. To taste it, that's even better.

Cream sugar, shortening and molasses. Add egg and buttermilk and mix well... Then add the dry ingredients (enough flour to make a soft dough) sifted together and vinegar-soda mixture. Mix well, drop by small spoonful on ungreased cookie sheet, press out thin with fingers dipped in flour or with fork. Bake 10 minutes in 350 degrees F oven. Good served warm. Freezes well.

Combine in pan and let set while fixing part 2.
Now place part 1 on stove and bring to a boil, and drop the dumpling batter, a spoonful at a time, into the boiling mixture. Cover with lid and cook for about 15-20 minutes. Can be served with cream, ice cream, or whipped cream. Can be changed by using other berries. This is a very old recipe!

Melt butter. Pulse vanilla wafers in food processor. Combine crumbs with melted butter and press into 13 x 9 inch glass baking pan. Place in freezer.
Combine softened cream cheese and powdered sugar and stir until well mixed. Set aside. Put whipping cream into mixer with whisk attachment and mix until soft peaks form, about a minute. Slowly add sugar and continue mixing for an additional minute. Take half of the whipped cream and add to the cream cheese mixture, blending together. Set aside remaining whipped cream in a small bowl. (You'll need the mixer bowl again!)
Remove pan from freezer and drop spoonfuls of whipped cream/cream cheese mixture on top, spreading evenly across top. Return pan to freezer. Squeeze half a lemon into a small bowl and remove any seeds. Pour milk and instant pudding into mixer bowl and beat for about 2 minutes. Peel and slice bananas into the bowl with the lemon and toss them with the lemon juice. Remove pan from freezer. Place bananas evenly over the cream cheese layer and drop a few dollops of the pudding mixture on top of bananas, spreading evenly. Top with remaining whipped cream, and using a micro-plane grater, grate chocolate in a light layer all over the top. Cover with plastic wrap and place into refrigerator, allowing to set for at least 3 hours before serving. Cut into squares to serve.
*Allowing each layer to set a bit in the freezer helps, not only with spreading the next layer, but also when cutting into squares for serving.

Mary's Favorite Burrito Casserole
Preheat oven to 350 degrees F. Cook ground beef and onion over medium high heat until browned and drain if needed. Add garlic, chili powder, paprika, dried oregano, dried marjoram, salt, pepper, and cumin. Stir and allow the flavors to meld together a few minutes; add water and simmer for approximately 10 minutes. Stir in refried beans and Rotel tomatoes; heat until warmed through.
Stack tortillas on a plate and cover with a damp paper towel; heat in the microwave on high about 30 seconds, just to warm for easier handling. Spray 13 x 9 inch glass baking pan with PAM and set aside. Take one tortilla and place a strip of the meat/bean mixture slightly off center on the tortilla, fold in the short side once, fold bottom up over it and continue to roll completely up. Place into baking dish, seam side down. Continue rolling the remaining tortillas. Stir the tomato sauce and green chilies together and pour mixture across all of the tortillas, primarily in the center area of the pan. Sprinkle cheese over the tomato sauce. Cover with foil and bake at 350 degrees F for approximately 30 minutes.

Peanut Butter Cupcakes With Chocolate Icing
Heat oven to 350 degrees F. Place paper baking cups in muffin pan or spray with non stick cooking spray. In large bowl beat cake mix, eggs, water, oil and 3/4 cup peanut butter on low speed until well mixed. Pour into muffin cups filling about 2/3 way full. Bake 20 minutes or until toothpick inserted into center comes out clean. Mix frosting and 1/4 cup peanut butter together. Spread over cooled cupcakes and sprinkle with peanuts.
