Crispy Roasted Garbanzo Beans

Easy and inexpensive. Goes great as a salad or soup topper or snack.

Ingredients:

  • 1 (29 oz.) can garbanzo beans, rinsed and drained
  • Advertisement

  • 1 Tbsp. extra virgin olive oil
  • Salt and pepper, to taste
  • Any spice combination of your choosing like smoked paprika, chipotle chili powder, or roasted cinnamon.

Directions:

Preheat oven to 400 degrees F.

Lightly coat a roasting pan with olive oil and spread garbanzo beans in the bottom. Sprinkle with salt and pepper, toss to coat and let stand for 15 minutes.

Sprinkle with seasoning mixture and shake pan to coat beans again.

Roast on bottom rack of oven shaking pan about every 15 minutes until browned and crunchy. It takes about 35 to 50 minutes to roast. Cool to obtain the crunchiness and store in an airtight container.

Here are some spice combination ideas:

  • Mexican Flavor: chili powder, garlic powder, and hot chile limon powder
  • Middle Eastern Flavor: cumin, garam masala, ginger powder, and garlic powder

  • Southwest Flavor: barbecue spices
  • Holiday Flavor: cinnamon, ginger, allspice, and cloves

I've done this before when looking for a healthy substitute for salted peanuts, and they were yummy, but it never occurred to me to use any of the spices you've suggested, what a great idea!! I can't wait to get a can of garbanzo beans. Thanks!

Yummy!. My daughter is vegetarian and chickpeas are so healthy. I have never bought the canned one, only the dried ones. Can't wait to try your recipe!
