Vinaigrettes: A Secret Weapon When Cooking

I've found this to be very helpful when I've forgotten to add a needed item to my grocery list. Vinaigrettes are a secret weapon for fast flavor. Use them as a marinade for chicken or drizzle spoonfuls over simply baked fish and salads. Whisk together 1/4 cup olive oil, 2 tablespoons white wine vinegar and a 1/2 tsp. ground mustard. Then add herbs, say tarragon or dill, or spices like cumin and a pinch of red pepper, plus salt and pepper. Stir in a bit of honey for a sweet touch.
