Crustless Egg Custard Recipe

I lost a recipe for crustless egg custard that you did not have to cook in a water bath. This is such a wonderful comfort food and I miss it! Thanks.

That's pretty close. I remember that the one I had didn't have flour but did have nutmeg.
These sound good so I'll try it.

I too hate the whole water bath procedure, so I was quite happy to come across this post--I will be making this recipe from Harriet very soon--Thanks :)

CRUSTLESS EGG CUSTARD PIE

3 eggs
1 1/2 c. milk
1 1/4 c. sugar
1/3 c. flour
1 tbsp. butter
1 tsp. vanilla
Dash of salt

Mix all ingredients together with electric mixer. Pour into greased pie pan. Bake at 350 degrees for 35 minutes.

are you talking about an IMPOSSIBLE PIE? i dont have recipe in front of me. but you put it in a blender and whirl it and put in dish and bake. email me if you think thats it.

IMPOSSIBLE CUSTARD PIE - Crustless
A New Zealand Recipe from Alison Holst

Whisk following in a bowl -
2 large eggs; 1/4 cup sugar; 1/4 cup S R Flour;
1 cup milk; 1 1/2 tbsp melted butter; 1 tsp almond or vanilla essence.

Pour mixture into a buttered or sprayed 8in pie plate and sprinkle with nutmeg or cinnamon sugar (1/4 cup each brown and white sugars and 1 tbsp spice)
Bake at 350deg.F for 30-35 minutes or until the centre of the pie is no longer liquid.
Serve warm with a little lightly whipped cream.

Variation: Use 1 1/2 times the mixture for a 9in pie plate.
Should the pie rise too high in cooking, just stab it with a knife and it will flatten out nicely.
