Potato Beef Casserole

Ingredients:

• 2 Tbsp. shortening
• 2 lbs. beef stew meat, cut in cubes
• 1 cup water
• 2 big potatoes, sliced thin
• 1 can cream of mushroom soup
• 1 cup sour cream
• 1 1/4 cup milk
• salt and pepper
• 1 cup shredded cheddar cheese
• 1 1/4 cup Wheaties cereal, crushed

Directions:

Melt shortening in a large skillet. Cook meat and onion in shortening until brown. Add water and boil 1 minute. Reduce heat, cover and simmer about 50 minutes. Pour meat mixture into an ungreased baking dish. Put potato on meat. Stir together soup, sour cream, milk, salt and pepper. Pour over potatoes; sprinkle with cheese and cereal. Bake at 350 degrees F until tender, about 30-40 minutes.

Bake uncovered at 400 degrees F for 10 minutes. Brown beef in large chunks; drain. Place beef, broccoli, 1/2 can French fried onions and tomatoes in potato shell. Combine soup, milk, 1/2 cup of cheese and seasonings; pour over beef mixture. Bake covered at 400 degrees F for 20 minutes; top with remaining cheese and onions and bake uncovered 5 minutes longer.
