This recipe serves two.
Ingredients:
- 5 eggs
- 1 Tbsp. milk
- 1/4 tsp. salt
- 1/4 cup Parmesan cheese, grated
- 1/8 cup Swiss cheese, grated
- 1 cup fresh spinach, finely chopped
- 1/4 cup parsley
- 1/4 cup onion, finely chopped
- 1/2 clove garlic, minced
- 1 Tbsp. butter
Directions:
In large bowl, beat eggs; mix milk, salt, Parmesan cheese, Swiss cheese, spinach, parsley, onion, and garlic. Heat 1 tablespoon butter in skillet. Pour mixture into pan. Cook until eggs are thickened but still moist. Fold over.
