Hominy and Chili Casserole

Ingredients

  • 2 cans whole white hominy
  • 2 Tbsp. grated onion
  • 1 cup medium white sauce
  • 1 cup coarsely shredded Monterey Jack cheese
  • 4 canned, peeled green chilies, diced and seeded
  • 1 tsp. salt
  • 1/2 cup dry bread crumbs
  • 2 Tbsp. butter

Directions

Drain hominy; mix with onion, white sauce, cheese, chilies and salt. Pour into 1 1/2 qt. casserole, sprinkle top with bread crumbs and dot with butter. Bake at 350 degrees F for 30 minutes. Place under broiler if necessary to brown top.
