Hominy and Chile Casserole
- 2 cans whole white hominy
- 2 Tbsp. grated onion
- 1 cup medium white sauce
- 1 cup coarsely shredded Monterey Jack cheese
- 4 canned, peeled green chilies, diced and seeded
- 1 tsp. salt
- 1/2 cup dry bread crumbs
- 2 Tbsp. butter
Drain hominy; mix with onion, white sauce, cheese, chilies and salt. Pour into 1 1/2 qt. casserole, sprinkle top with bread crumbs and dot with butter. Bake at 350 degrees F for 30 minutes. Place under broiler if necessary to brown top.
