Today's Recipes


2 Step Pork Chops

Ingredients

  • 1 tsp. vegetable oil
  • 4 pork chops
  • 1 can (10 3/4 0z) cream of mushroom soup
  • 1/2 cup water

Directions

Heat oil in skillet. Add chops and cook until browned.

Add soup and water. Heat to a boil. Then reduce heat to low and continue to cook 10 minutes or so or until done.

Boneless pork loin roast (sliced) can also be used in this recipe.

Z Is for Zebra Striped Cookies

Ingredients

  • 3 cups flour
  • 1 cup sugar
  • 2/3 cup powdered sugar
  • 1 tsp. vanilla
  • 1 1/4 cup butter, softened
  • 1/4 tsp. salt
  • 1 egg
  • 1/4 cup cocoa

Directions

Mix flour, sugars, vanilla, butter, salt and egg until dough forms. Divide dough into halves. Mix cocoa into 1 half. Pat or roll each half into 9 inch square.

Cut each square into 3 inch strips.

Cut strips crosswise into halves.

Lift 1 brown strip half with spatula onto plastic wrap. Top with 1 white strip half, press firmly.

Top with 10 remaining brown and white strips, alternating colors and pressing firmly to form a bar about 4 1/2 inches long, 3 inches wide and 3 inches high. Wrap in plastic wrap and refrigerate until chilled (1-2 hours)

Heat oven to 375 degrees F.

Cut bar crosswise into about 18 - 1/4 inch slices. cut each slice crosswise into halves.

Place on ungreased cookie sheet.

Bake until cookie edges begin to brown (8-10 minutes.)

Makes 36 cookies.

P. S. If you'd like, cut the 18 slices of dough with a floured horse cookie cutter (about 3x2 inches to cut out cookies.)

Bake as directed. Repeat by forming another bar of dough. Chill, cut and bake makes about 30 cookies by doing it this way.

Delicious Strawberry Smoothies

These smoothies are always a big hit with people with a sweet tooth, health conscious people, and of course people who love smoothies!

Ingredients:

  • Makes 2 servings
  • 8 frozen strawberries
  • 2 sliced bananas
  • 1 cup strawberry yogurt
  • 1/2 cup milk

Directions:

In the blender put all ingredients. Puree until all strawberries chunks are gone.

Green Tomato Mincemeat

Ingredients

  • 4 Qts. ground green tomatoes
  • 4 Qts. ground tart apples
  • 2 lbs. ground raisins
  • 1 cup vinegar
  • 2 Tbsp. cinnamon
  • 1/2 cup molasses
  • 2 Tbsp. salt
  • 1 tsp. ground cloves
  • 1 tsp. allspice
  • 2 Tbsp. brown sugar, packed
  • Boiling water

Directions

Place ground tomatoes in a large kettle; cove with boiling water. Boil for 5 minutes. Drain; and repeat. Drain again. Add all remaining ingredients and bring to a boil. Simmer till thick, stirring occasionally. Put in jars and seal.. Pressure canner for 10 minute at 10 lbs. of pressure. Makes: 8 Quarts.

(great way to use up those tomatoes still left in the garden when frost time rolls around and ready for holiday baking!)

Make Your Own Lollipops (Just in time for Halloween!)

Ingredients

  • Vegetable oil
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 3/4 tsp. peppermint extract*
  • 2 drops red food coloring*

Directions

Brush inside surfaces of lollipop molds with oil.

Combine sugar, syrup and water in medium saucepan; stir well. Cook over low heat without stirring until candy thermometer reaches hard crack stage (310 degrees). Remove from heat; stir in extract or flavoring and food coloring.

Immediately pour hot mixture into molds. Press sticks in indentations of molds, gently twirling to embed. Cool completely; lift lollipops out of molds, and wrap tightly in plastic wrap. Store in a cool, dry place. Makes about 8 (2 inch) lollipops.

* Can substitute your choice of flavoring or food coloring to suit your tastes.
