Vegetable Beef Soup
I came up with this recipe when using other ingredients from leftovers. Lots of good vegetables and it's filling.
- 2 lbs. ground beef
- 1 large onion, rough chopped
- Salt and Pepper
- 1 large can diced potatoes
- 1 large can diced tomatoes
- 1 can green beans, drained)
- 1 can carrots, drained
- 1 can shoe peg corn (I like white)
- 1 can cabbage
- 1 can Northern beans
- 1 large can tomato juice
Brown the ground beef and onion together until ground beef is done, drain. Add back to the pot and add all other ingredients. Let simmer on stove top all day. This can be made in the crock pot on low for 6-8 hours.
