Does anyone know how many cookies I will get from the cake mix cookies? The article is called "Easy Cake Mix Cookies". I'd like to try these, but it's just my husband and I. I don't want a ton of cookies to eat because I don't want to ruin my girlish figure!
I always form my cookie dough into round logs from 8 to 10 inches long and in the diameter size of the cookie I want and wrap in aluminum foil or plastic wrap and store in my freezer (my own version of slice and cook dough). I can then slice off as few or many as I want to cook. Normally just two for an after dinner treat for my spouse and me. More if I have drop-in company!
Here's a cake mix cookie recipe I hope you try and like.
1 box devils food cake mix 1/4 cup butter or margarine softened 1 8oz cream cheese softened 1/4 teaspoon vanilla extract 1 egg Cream butter and cream cheese. Blend in egg, and vanilla. Add in dry cake mix about a third at a time mixing well after each addition. Cover and chill about 30 minutes. Drop by teaspoon on ungreased baking sheet. Bake at 350 for 8-10 minutes.
What I do is make up several different batches and I use a 1 1/2 ounce cookie scoop, I put them all on a cookie sheet and freeze them. When I want nice warm cookies I just pop a half a dozen cookie balls in the toaster oven. I have several different recipes so I have a nice variety in the freezer at all times, I just write on the ziploc bag the time in temp, if you want more Cake Mix Cookie recipes just let me know.
When I make cake mix cookies, I get about 4 dozen small ones by dropping 1 teaspoon size cookies. I fill 4 cookie sheets with a dozen each, and bake in one batch. You could make half a recipe, and keep the rest of the cake mix in the freezer until you want more cookies.

It seems there is always some brand of cake mix on sale! This is an economical way to use cake mix - it doesn't matter if you use the brand name, or the generic store brand - these cookies turn out great! Experiment with different flavored mixes and add-ins for different kinds of cookies.

I try to keep cake mix on hand so if I need to take something to someone quickly, I can always pull out this recipe and make it up in just a few minutes!
Ingredients:
1 box any flavor cake mix
2 eggs
1/3 cup oil
Directions:
Mix ingredients together until smooth. Roll into 1 inch balls and place on a lightly greased cookie sheet. Use the bottom of a drinking glass to flatten slightly. Bake at 375 degrees F until the tops crackle (8-10 minutes). Cool and frost if desired.
(I have added nuts, chocolate chips and sprinkles before. You can use your own imagination! Our favorite is the chocolate with pecans with chunky chocolate in them. The strawberry also makes up good with the cream cheese icing in the tub.)

1 cup chocolate chips, M&M's, nuts or whatever you have on hand (this is optional)
Directions:
Combine all ingredients and mix together. Drop by tablespoons
on a cookie sheet prepared with non-stick spray. Bake at 350º
for about 12 minutes.

These cookies are fantastic! I used a Devils Food cake mix with powdered sugar on top. My husband and kids are "sweet-aholics" and seem to need their "fix" every evening after supper. This a very easy way to make a fantastic cookie in just a few minutes. After working all day, quick recipes like this one are very much appreciated. I am anxious to try different flavors! I make these cookies often, using a variety of mixes and mix-ins. Some of our favorite mix-ins are mini chocolate chips, mini M and Ms, nuts, sprinkles (jimmies here in NH), and raisins. (09/06/2004)

I made these cookies last week and added 3 cups of quick oats, a cup of raisins, and about 3T of milk, made the best oatmeal raisin cookies you ever tasted. I used a spice cake mix, but think the next time I make these, I will put in a teaspoon or so of pumpkin pie spice to jazz them up. (03/25/2005)
