Easy Cake Mix Cookies

I try to keep cake mix on hand so if I need to take something to someone quickly, I can always pull out this recipe and make it up in just a few minutes!

Ingredients:

  • 1 box any flavor cake mix
  • 2 eggs
  • 1/3 cup oil

Directions:

Mix ingredients together until smooth. Roll into 1 inch balls and place on a lightly greased cooki sheet. Use the bottom of a drinking glass to flatten slightly. Bake at 375 degrees F until the tops crackle (8-10 minutes). Cool and frost if desired.

(I have added nuts, chocolate chips and sprinkles before. You can use your own imagination! Our favorite is the chocolate with pecans with chunky chocolate in them. The strawberry also makes up good with the cream cheese icing in the tub.)

Cake Mix Cookies II

It seems there is always some brand of cake mix on sale! This is an economical way to use cake mix - it doesn't matter if you use the brand name, or the generic store brand - these cookies turn out great! Experiment with different flavored mixes and add-ins for different kinds of cookies.

Ingredients:

  • 1 packaged cake mix, any flavor
  • 2 large eggs
  • 1/2 cup oil
  • 1 cup chocolate chips, M&M's, nuts or whatever you have on hand (this is optional)

Directions:

Combine all ingredients and mix together. Drop by tablespoons on a cookie sheet prepared with non-stick spray. Bake at 350º for about 12 minutes.

We started making these cookies half hour before the Halloween party and they were done perfect and just on time! I used a carrot cake mix and replaced the oil with pumpkin sauce.

I made these and within 20 min after they were done..they were hard like rocks? Any suggestions to make the chewier cookies.

We call these "cheater cookies" They will come out perfect every time. I substitute applesauce for the 1/3 cup oil. Perfect every time.

I made these cookies last week and added 3 cups of quick oats, a cup of raisins, and about 3T of milk, made the best oatmeal raisin cookies you ever tasted. I used a spice cake mix, but think the next time I make these, I will put in a teaspoon or so of pumpkin pie spice to jazz them up.

I make these cookies often, using a variety of mixes & mix-ins. Some of our favorite mix-ins are mini chocolate chips, mini M&Ms, nuts, sprinkles (jimmies here in NH) and raisins.

These cookies are fantastic! I used a devils food cake mix with powdered sugar on top. My husband and kids are "sweet-aholics" and seem to need their "fix" every evening after supper. This a very easy way to make a fantastic cookie in just a few minutes. After working all day, quick recipes like this one are very much appreciated. I am anxious to try different flavors! Joni
