Chicken Spoon Bread

Ingredients

  • 2 cups milk
  • 1/4 cup white corn meal
  • 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 eggs, separated
  • 1/3 cup chopped green onion
  • 2 cups chopped cooked chicken
  • 2 Tbsp. melted butter
  • 1 cup grated American cheese

Directions

Scald milk in double boiler. Add corn meal and cook to a mush thickness. Remove from heat and add baking powder, salt, pepper, beaten egg yolks, onion, chicken and butter. Beat together until smooth. Fold beaten egg whites into mixture. Pour into greased 9 inch pan. Top with grated cheese. Bake at 375 degrees F for 40 minutes or until firm and brown.
