1 1/2 lbs. chicken breasts, boneless, skinless and cut into strips
1 package frozen cut green beans, thawed (9 oz.)
2 Tbsp. water
1/2 lb. Velveeta cheese, cut into 1/2 inch cubes (can be reduced fat cheese)
1/8 tsp. pepper
3 cups long-grain rice, cooked
Directions
Spray a large skillet with cooking spray, and over medium high heat cook the chicken. Stir in the green beans and water and reduce the heat to medium low. Cover and simmer for 5 minutes or until the beans are tender. Add the cheese and pepper. Cook until the cheese is completely melted, stirring frequently. Serve over long-grain rice.
