A great versatile breakfast/brunch dish. With a unique crust, meat, cheese, and veggies. I can serve this with toast and fruit for a complete meal.

Ingredients:

  • 2 cups (8 oz) grated Colby and Monterey Jack cheese blend, divided
  • 1 pkg. (22.5 oz) frozen toaster hash brown patties, thawed (10 patties)
  • 8 oz. cream cheese
  • 12 eggs
  • 1/2 tsp. coarsely ground black pepper
  • 1 lb. of pork sausage, cooked and crumbled
  • 1 medium onion, chopped
  • 3 plum tomatoes, chopped
  • 1 green pepper, chopped
  • Additional tomatoes

Directions:

Preheat oven to 450 degrees F. Lightly grease 9x13 inch pan with cooking spray. (I use my stoneware bar pan.) Brown your sausage in frying pan and set aside. Grate cheese and set it aside. Crumble hash browns in pan; press gently into an even layer. Sprinkle half of the cheese evenly over hash browns. Bake 13-15 minutes or until crust starts to brown and cheese is melted.

Meanwhile, in medium bowl, whisk cream cheese until smooth using wire whisk. Gradually add eggs and black pepper; whisk until smooth. Add cooked sausage, onion, tomatoes and green pepper.

Pour egg mixture over crust. Return to oven; bake 6-8 minutes or until center is set. Remove from oven; top with remaining cheese and tomatoes. Cut and serve. Delish!

*I've tweaked this recipe some. You can use chopped ham and I usually add white onion instead of green like the original called for because my kids will eat it. I also add green pepper and tomatoes inside the dish for more flavor, instead of tomatoes just on top.
