Ginger and Orange Rhubarb

Rhubarb is now in season and at its best. I think it's best cooked really simply, and it is delicious with ginger. I have had it cooked this way ever since I was a child.

Ingredients:

  • four stalks rhubarb
  • thumb-sized knob of ginger, chopped very fine
  • quarter of a pint of orange juice
  • between half and one cup of sugar (to taste)

Directions:

Cut the rhubarb into short pieces, sprinkle with sugar and chopped ginger, then pour on orange juice and stew gently on a low heat until soft (about half an hour). Delicious with cream or vanilla ice cream.

Time:10 Minutes Preparation Time
30 Minutes Cooking Time
