Anniversary Dinner Chili

I am planning a very special anniversary dinner for my wife. We are planning on having red wine and chili. What is a good chili recipe to serve with red wine?

Chilli Man canned chili with beans by Milnot.
I buy it at Whole Foods Market.
Even meat eaters don't know it's vegetarian.

Chile Con Carne
1 1/2 pound lean ground beef
1 onion chopped
1 can pork and beans
1 can tomato soup
salt and pepper to taste
2 cloves garlic
1 tsp chili powder
1 can red kidney beans

Brown meat, add onions, mix well. Add other ingredients and bring to a boil. Simmer for 30 to 45 mins. This also freezes well.

Chile Con Carne with Kidney Beans
1 onion, diced
1 tablespoon fat
2 cups cooked tomatoes
1 pound ground or minced beef
2 cups cooked red kidney beans
1/2 teaspoon chili powder
1 teaspoon salt
Brown onion in fat, add remaining ingredients, cover and simmer 20 minutes. Add water if mixture becomes too dry. Serves 6.

Chili
1 lb. ground beef
1 can chili beans
1 can kidney or red beans
1 can pinto beans
1 pkg chili seasoning mix
1 can diced tomatoes
1 can tomato sauce

The sizes are all 16 oz cans except the tomato sauce. It is 8 oz.

Crumble and fry the ground beef and drain. Put it in a large pot or a crock
pot. Add all the other ingredients and cook slowly until hot. Add whatever
garnishes desired (onions, cheese, etc).

Chili Casserole

1 pound ground beef
1/2 cup chopped onion
1 tablespoon chili powder
1 teaspoon salt
1/4 teaspoon oregano
1 (30 ounce) can refried beans
1 (16 ounce) can stewed tomatoes
6 ounces Monterey jack cheese
2 cups slightly broken tortilla chips
Brown beef and onion in skillet. Add chili powder, salt and oregano. Stir in beans and tomatoes.
Remove from heat.
Shred cheese, reserving 1/2 cup for topping. Spoon 1/2 of beef mixture into 2-quart casserole. Sprinkle
with half of cheese; top with half of tortilla chips. Repeat layers. Bake at 350 degrees F for 20 minutes.
Sprinkle with reserved 1/2 cup of cheese. Bake 5 minutes longer or until cheese has melted and mixture
is bubbly.
Makes 8 servings.

Chili Casserole

1 lb ground beef
1/2 c chopped onion
1 can (15 1/2 oz) kidney beans, rinsed and drained
1 can (15 oz) tomato sauce
1 can (14 1/2 oz) stewed tomatoes
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
2 c cooked bow tie pasta

In a skillet, brown beef and onion; drain. Stir in beans, tomato sauce,
tomatoes, garlic powder, salt and pepper. Cover and simmer for 5 minutes.
Stir in pasta; heat through. 6 servings

Chili con Queso
Serves 6
1 lb. ground beef
1/2 cup chopped onion
2 cups (1 lb. can) kidney
beans, drained
2 cups (1 lb. can) tomatoes, undrained
1- 8 oz. can tomato sauce
1 T. chili powder
1 tsp. salt
sharp cheddar cheese, shredded

Brown meat; drain. Add onion;
cook until tender. Stir in
remaining ingredients except
cheese. Cover & simmer 30
minutes, stirring occasionally.
Top each serving with cheese

Chili Verde

1 lb. uncooked stew meat
1 (10 oz.) can beef broth
1 to 2 small cans diced green chilies
1 (14 oz) can stewed tomatoes drained
1 tsp cumin

Place all ingredients in crock-pot and cook on low 8 to 10 hours. Thicken with corn starch and serve on warm flour tortillas with cheese.

CHILI WITH BEANS
2 lbs. pinto beans
1 lb. hamburger
1 can tomatoes
1 can tomato paste
2 tsp. cumin powder
2 sm. chopped onions
1 pkg. chili powder
Salt and pepper to taste
Cook beans until done. Then add onions, hamburger, cumin powder, chili powder, salt and pepper to beans and cook until onions are tender. Then add tomatoes and tomato paste. This is good to freeze.

I would do an old-style chili with beef cubes (sirloin/chuck), tomato based with the usual spices and herbs.
