Use Latex Gloves for Messy Kitchen Tasks

Everyone's in a hurry when preparing meals and cleaning up, so try using medical-type latex gloves when making meatloaf, rolling balls of cookie dough, kneading dough, etc. I don't even take off my rings, and don't have to worry about my nails. The gloves are available on the shelf in one-size-fits-all in almost any pharmacy area, in big boxes of 50 and 100 gloves. They're only a few cents each, and make it so fast to clean up when mixing things by hand or handling raw meat.

Make Homemade Noodles In Your Bread Machine

I have RH so my hands aren't very good for doing some cooking. Yesterday my grandson and I were a bit under the weather so I decided to make some home made chicken noodle soup. There are some stores that have the home made type but I couldn't find any yesterday so I decided to make some using my bread machine. I can't knead any kind of dough because of my crippled hands. Anyway, I put everything for the noodles in the bread machine and set it on knead. It worked great. I have a hard time making cookies so so now I'm going to try that next. I love it when I can find dual uses for my kitchen appliances.

Use a Skillet for Faster Cooking

When cooking, try using a skillet instead of a pot or pan. A skillet puts a larger cooking surface in contact with your heat source. Food will cook faster, saving on your energy bills and saving your time.

Easy Jello Dessert

This is a great and quick dessert. You take one large Jello gelatin, any kind you like, one container of Cool Whip, 1 container of cottage cheese, the smaller size, and about a cup of cut up nuts. You put the gelatin in dry, mix all the ingredients together and put in a square pan or whatever kind of pan you would like to use, put in the fridge to get cold and to set.

Baked Spaghetti

Ingredients

  • 12 oz. package spaghetti
  • garlic salt,to taste
  • 1 beaten egg
  • 1 jar spaghetti sauce
  • 1 cup milk
  • Raw ground beef
  • 2 cups shredded mozzarella cheese

Directions

Combine cooked spaghetti, egg and milk in a bowl. Mix well. Spoon into greased 9x13 inch pan. Sprinkle with some of the cheese and salt. Pour in sauce and top with beef and cheese. Bake 300 degrees F for 1 hour.

Source: Someone gave it to me, years ago. Do not know wher it originally came from.

Auntie Nina's Pumpkin Cookie

Ingredients

  • 8 oz. butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 29 oz. can pumpkin
  • 3 cups flour
  • 1 tsp. salt
  • 2 tsp. nutmeg
  • 3 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 cups raisins or dried cranberries or dried cherries

Directions

Preheat oven to 375 degrees F. Cream butter and sugars. Lightly mix eggs, then add to butter/sugar mixture. Add pumpkin and spices. Slowly add flour, baking powder, and salt to mixture. Mix until smooth. Add dried fruit

Drop tablespoons on greased cookie sheets and bake for 5 - 7 minutes until the bottom of the cookie is light brown.

Enjoy, Delicious!

French White Bean Soup

Ingredients

  • 1 cup onion, chopped
  • 2 leeks, chopped (white part only)
  • 2 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1 can (15 oz.) white beans (Great Northern or Pinto) drained and rinsed
  • 2 medium potatoes, peeled and cut in 1/2-inch cubes
  • 1/2 tsp. dried thyme
  • 3 cups vegetable broth, preferably with no added salt
  • 1 cup evaporated skim milk
  • 1/4 cup fresh parsley or watercress, chopped
  • 2 tsp. lemon juice
  • 1 dash salt
  • White pepper to taste (preferably freshly ground)

Directions

In a large saucepan or Dutch oven, saute onions, leeks and garlic in olive oil for about 5 minutes over medium-high heat. Add beans, potatoes, 1/4 tsp. of thyme and 1-1/2 cups of vegetable broth; simmer 20 minutes.

Puree in blender or food processor. When smooth, return to saucepan and add remaining broth and evaporated milk, heat through. If necessary, add more water or broth to reach desired thickness.

Before serving, stir in chopped parsley or watercress, lemon juice, salt and white pepper, and remaining thyme.

Robin's Recipe Corner:

Vegetable Saute'

Ingredients

  • 1/4 cup olive oil
  • 6 cups yellow squash and zucchini
  • 1/4 cup red wine vinegar
  • 1 envelope Good Seasons Italian salad dressing mix

Directions

Heat oil in large skillet on medium high heat. Add vegetables; cook and stir until vegetables are tender crisp. Sprinkle salad dressing mix over vegetables; toss to coat well. Stir in vinegar until well mixed. Serve hot.

Bacon Cream Cheese Spread

Ingredients

  • 4 slices bacon, fried
  • 1 pkg. cream cheese
  • 1 Tbsp. mayonnaise
  • 3-4 Tbsp. ketchup
  • 1 Tbsp. finely chopped onion

Directions

Drain bacon on paper towel. Rub mixing bowl with garlic or use garlic powder to season mixture. Add cream cheese, mayonnaise, and ketchup in bowl and beat until smooth. Cut bacon (should be fried crisp) and add to mixture. Add onion and stir. Salt and pepper, to taste. You can use extra onion, if you like. If you like mixture thinner, use more mayonnaise. Use first of second day for best flavor.

Lowfat Oatmeal Bran Muffins

Ingredients

  • 1 cup oats
  • 1 cup skim milk
  • 2 egg whites
  • 1/2 cup brown sugar
  • 1/4 cup oil
  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 crushed ripe banana

Directions

Combine oats and milk; let stand for 20 minutes. Can use part oat bran for oats. Mix all ingredients and bake at 400 degrees F for 30 minutes.

Broccoli-Lettuce Salad

Ingredients

  • iceberg lettuce
  • romaine lettuce
  • red onion
  • broccoli
  • almonds, slivered
  • raisins
Dressing:
  • 1/4 cup vinegar
  • 1/2 cup sugar
  • 1 cup mayonnaise

Directions

Mix salad ingredients together. Then mix dressing ingredients and pour over salad.

Spiced Tea

Ingredients

  • 2 cups Tang
  • 3/4 cup instant tea
  • 1 pkg. lemon Kool-Aid
  • 1 pkg. mixed fruit gelatin
  • 1/2 cup sugar
  • 2 tsp. cinnamon
  • 1 tsp. cloves
  • 1/4 tsp. allspice

Directions

Use 3 tsp. of mix per cup.
