Meatloaf Without Tomato Products

I need a meatloaf recipe that is made without any tomato products. My brother is a kidney patient and has dialysis 3 times a week. He is single and has only me to take care of him. I would appreciate any recipes (home tested) for low-sodium, low-potassium and your prayers for him.

I would also like to say Happy Birthday to all of you June babies. Today (June 2nd) is my 64th. I love this site, you are so friendly and helpful. Its like a big extended family. Thank you, Ellen

Homemade Italian Seasoning

Ingredients

  • 2 Tbsp. basil
  • 2 Tbsp. marjoram
  • 2 Tbsp. oregano
  • 2 Tbsp. rosemary
  • 2 Tbsp. thyme

Directions

Mix all ingredients together and store in airtight container.

Brownie Pudding Cake

Ingredients

Pudding
  • 1 cup flour
  • 3/4 cup sugar
  • 3 Tbsp. unsweetened cocoa powder
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 2 Tbsp. butter or margarine, melted
  • 1 tsp. vanilla
  • 1/2 cup chopped pecans or walnuts
Topping
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 cups boiling water

Directions

Preheat oven to 350 degrees F. For pudding, combine all ingredients in medium bowl; pour into greased 8 inch square baking dish. For topping, combine sugar and cocoa in small bowl; gradually stir in boiling water. Pour over pudding. Do not stir.

Bake 45 minutes. (Topping will sink and pudding will rise to the top.) Serve topped with sweetened whipped cream, if desired.

Hearty Baked Beans

Ingredients

  • 1/2 lb. ground pork of beef
  • 3/4 cup barbecue sauce
  • 1 Tbsp. dried onion flakes
  • 1/4 cup bacon bits
  • 1 tsp. Worcestershire sauce
  • 1/2 cup brown sugar
  • 1 can pork and beans (29oz)

Directions

Brown meat, drain.combine all ingredients, put in casserole, cover, and bake at 350 degrees F for 45 minutes. Note: Can cook in microwave, 15-20 minutes, on high. Stir halfway through. Continue cooking until done.

Microwave Stuffed Peppers

Ingredients

  • 1 pound of ground chuck
  • 1/2 cup instant rice
  • 1 egg, beaten
  • 1 medium onion, chopped
  • 1 can (15 oz) tomato sauce
  • 1/2 cup catsup
  • 1 Tbsp. Worcestershire Sauce
  • 1 tsp salt
  • 1/4 tsp. pepper
  • 3 large peppers cut in half lengthwise
  • 1/3 cup water
  • 1 Tbsp. sugar

Directions

Mix together ground chuck, rice, egg, onion, 1/2 cup tomato sauce, catsup, worcestershire sauce, salt and pepper. Arrange pepper halves in a baking dish. Fill with meat mixture. Mix together remaining tomato sauce, water and sugar. Pour over green peppers. Cover with a tight fitting lid or plastic wrap. Microwave on medium high for 20 to 25 minutes until meat is no longer pink and peppers are tender.

Note: you can use smaller peppers but then you will need to have more - however many to use up meat mixture. This will re-heat and freeze nicely.

Reuben Salad

Ingredients

  • 1 1/2 cup macaroni
  • 8 oz. corned beef, chopped
  • 8 oz. Swiss cheese, chopped
  • 1 Tbsp. caraway seeds
  • 8 oz. sauerkraut
  • 8 oz. Russian dressing

Directions

Cook macaroni. Add chopped corned beef, Swiss cheese and add caraway seeds. Drain sauerkraut and add to other mixture. Add Russian dressing until moist, use as much or as little dressing as to taste. Note: Cool macaroni before adding to salad.

Meatballs In Barbecue Sauce

Ingredients

  • 3 lbs. hamburger
  • 2 cups quick oats
  • 2 eggs
  • 1 cup evaporated milk
  • 1 cup onions, chopped
  • 2 tsp. chili powder
  • 1/2 tsp. pepper
  • 2 tsp. salt
  • 1/4 tsp. garlic powder
Sauce:
  • 2 cups ketchup
  • 1 1/2 cup brown sugar
  • 2 Tbsp. liquid smoke
  • 1/2 cup onion, chopped
  • 1/2 tsp. garlic powder
  • 1 cup tomato sauce

Directions

Mix hamburger, oats, eggs, milk, onions, chili powder, pepper, salt and garlic powder. Shape meat mixture into balls (don't brown) and put into casserole pan. Mix ketchup, brown sugar, liquid smoke, onions, garlic powder and tomato sauce. Pour over meatballs and bake in 350 degrees F oven for one hour.

Different Rhubarb Pie

Ingredients

  • 1 unbaked pie shell - 9 inch
  • 1/2 cup sugar
  • 3 Tbsp. flour
  • 3 Tbsp. butter
  • 3 egg yolks
  • 1/4 tsp. salt
  • 3 egg whites
  • 1/2 cup sugar
  • 3 cups rhubarb, cut up

Directions

Combine 1/2 cup sugar, flour, butter, egg yolks and salt. Mix well. Beat egg whites until stiff. Then beat in 1/2 cup sugar. Fold meringue into first mixture and fold in rhubarb. Pour into pie shell. Bake at 400 degrees F for 10 minutes, then lower heat to 325 degrees F and bake 40-45 minutes more.

Apple Fruit Salad

Ingredients

  • 1 pkg. any red gelatin (3 oz.)
  • 1 cup boiling water
  • 2 cup thick applesauce
  • 1 Jonathan apple, unpeeled and chopped
  • 1 can pineapple tidbits (13oz.)
  • 1/4 cup chopped pecans or English walnuts
  • 2 Tbsp. mayonnaise or salad dressing
  • green grapes for garnish

Directions

Dissolve gelatin in boiling water. Stir well to completely dissolve gelatin. Cool slightly, then add applesauce. When partially set, put into a 8 inch or 9 inch ring mold. Chill until firm. Chop apple and nuts. Drain pineapple. Mix apple, nuts, pineapple and salad dressing until blended. Unmold gelatin ring on large serving plate. Place fruit-nut mixture in center. Garnish with grapes.

Double Chocolate Chip Bars

Ingredients

  • 3/4 cup sugar
  • 1/2 cup margarine
  • 2 eggs
  • 3/4 cup flour
  • 2 Tbsp. cocoa
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. vanilla

Directions

Mix ingredients together and bake in 9x13 inch pan at 350 degrees F. When cake is done, remove from oven and spread 2 cups mini marshmallows on top. You have to put cake back in oven for about 3 minutes more to soften marshmallows. They will spread in a thin layer. Let cake cool.

Topping Ingredients

  • 1 cup chunky or smooth peanut butter
  • 1 cup chocolate chips

Topping Directions

Melt ingredients in double boiler and add 1 1/2 cups Rice Krispies. Spread on top of cake and cut in bars when completely cool.

Garlic Smashed Potatoes

Ingredients

  • 4 large potatoes, peeled and cubed
  • 4 Tbsp. unsalted butter, softened
  • 1/2 cup milk, heated {2% ok}
  • 2 tsp. roasted garlic juice
  • 1/4 cup sour cream
  • Salt and pepper, to taste

Directions

Place the potatoes in a saucepan, cover with cold water, and bring to a boil. Reduce heat slightly and cook until tender, about 20 minutes. Drain well and transfer potatoes to a mixing bowl and mash slightly. In a small saucepan, heat milk and roasted garlic juice. Slowly add milk to potatoes with butter, sour cream, salt and pepper. Mix well by hand or with an electric mixer. Beat until smooth. Garnish with parsley and serve immediately. Yield: 4 servings
