Mackerel or Salmon Patties

My mom used to make these regularly when I was growing up. Love these! Very simple and not expensive to make.

Ingredients:

  • 1 can mackerel or salmon (15oz.)
  • 1 cup soda crackers, crushed
  • 2 eggs
  • salt, to taste

Directions:

Mix all ingredients together in mixing bowl. Drop by tablespoonfuls into a heated frying pan that has 1-2 teaspoons oil in it. Brown on both sides. It just takes a few minutes on each side.

Servings: 6 (depends on size of patty)
Prep Time: 5 Minutes
Cooking Time: just a few minutes until browned on each side

That sounds yummy! I am going to try that the next time I make salmon patties. Also add a dash of liquid smoke to the mix before cooking the patties... tastes like smoked salmon. Delish!

Thanks. I simply don't like fish, but my husband does, so I've been looking for an easy salmon patty recipe.
