Mexican Caviar
Ingredients
- 2 cans chopped ripe olives
- 2 cans chopped green chilies
- 4 tomatoes (seeded and chopped)
- 3 green onions (chopped)
- 2 garlic cloves (minced)
- 2 tsp. olive oil
- 2 tsp. red wine vinegar
- 2 Tbsp. chives (chopped)
- 1 tsp. black pepper
- Dash of seasoning salt
Directions
Mix all ingredients together. Chill, or serve at room temperature.
Serve with corn chips.

Poor Man's Caviar (Salsa)
Here is a yummy recipe for salsa. it is called Poor Man's Caviar.
Ingredients
- 1 can Rotel
- 1 can Shoepeg corn
- 1 can Black Beans (drained)
- 1 can Black eyed Peas (drained)
- 1 tsp. chopped cilantro
- 1/2 cup chopped red onion
- 1 small bottle Zesty italian Dressing
Directions
Mix together and chill. serve with corn chips.
