Diabetic Oatmeal Raisin Cookies

Ingredients

  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. salt
  • 1/3 cup reduced fat butter, room temperature
  • 1/4 cup spoonable brown sugar substitute
  • 3 Tbsp. packed light brown sugar
  • 2 Tbsp. sugar
  • 1 large egg
  • 3 Tbsp. skim milk
  • 1/2 tsp. vanilla
  • 1 1/2 cup oatmeal
  • 1/2 cup raisins

Directions

Preheat oven to 350 degrees F.

Sift together flour, baking soda, cinnamon, salt. Set aside. Using an electric mixer on medium speed, cream butter, brown sugar substitute, brown sugar and granulated sugar until light and fluffy.

Add egg, milk and vanilla. Beat well. Gradually add flour mixture, 1/4 cup at a time. Mixing after each addition by hand, stir in oats and raisins. Drop by rounded teaspoons onto cookie sheet 2 inches apart. Bake until golden brown, about 10-12 minutes.

Cheese and Salsa Dip

Ingredients

  • 1 lb. box Velveeta or generic brand cheese, cut up
  • 1 cup salsa - thick and chunky is best

Directions

Mix cheese and salsa in 1 1/2 qt. microwaveable bowl. Microwave on high 5 minutes or until cheese is melted, stirring after 3 minutes. Serve hot with tortilla chips or crackers.

Cinnamon Rice

Ingredients

  • 1/2 cup rice (not instant)
  • 1 cup water
  • 1 Tbsp. milk
  • 2 Tbsp. raisins
  • 1 tsp. butter
  • 1/2 tsp. sugar
  • 1/4 tsp. cinnamon

Directions

Bring to a boil rice, water, milk and raisins; stirring occasionally lower heat. Cover with lid. Cook 15 minutes on low heat until water is absorbed. Mix sugar and cinnamon together and sprinkle over rice.

This makes 2 servings and is good for those on a diabetic diet.

So Easy Lemon Bars

Ingredients

  • 1 (18 oz) roll pillsbury refrigerated sugar cookies
  • 4 eggs, slightly beaten
  • 1 1/2 cups sugar
  • 1/4 cup flour
  • 1 tsp. baking powder
  • 1/4 cup lemon juice
  • 1-2 Tbsp. powdered sugar

Directions

Heat oven to 350 degrees F. Slice cookie dough as directed on package. Arrange slices in bottom of ungreased 13x9 pan. With lightly floured fingers press dough evenly in pan. Bake at 350 degrees F for 15-20 minutes or until light golden brown.

In large bowl, combine eggs, sugar, flour and baking powder. Blend well stir in lemon juice. Pour mixture over warm crust.

Bake at 350 degrees F for an additional 20-30 minutes or until top is light golden brown. Cool completely. Sprinkle with powdered sugar and cut into bars

Parmesan Cheesy Garlic Bread

Ingredients

  • 1 loaf French bread
  • 2 Tbsp. margarine or butter, softened
  • 2 cloves, garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Directions

Preheat oven to 350 degrees F. Cut bread in half lengthwise. Place, cut sides up, in shallow baking pan. Mix margarine and garlic until well blended. Spread evenly onto bread halves; sprinkle with cheeses.

Bake 15 minutes or until cheese is melted. Cut each bread half crosswise into 6 slices. Serve warm.

Susan's Tortilla Soup

I love Mexican food and love tortilla soup. Here's my recipe for it. If you like cilantro and lime you should like this. If you are not sure, you could add smaller amounts of lime and cilantro.

This works really well for clearing out the sinuses.

  • 8 cups chicken broth
  • 2-4 chicken half breasts (skinless boneless) cut into small pieces
  • 1 onion
  • several cloves of garlic minced
  • Juice of 1 lime
  • A little lime zest
  • 1 can or 1 1/2 cups cooked black beans (rinsed)
  • 2 16 oz cans chopped tomatoes or 4 large fresh tomatoes (peeled)
  • 1 cup carrots cut in small pieces
  • 1 cup chopped celery (about 3 stalks)
  • 1/2 bunch cilantro chopped
    (fresh is best but use 2 Tbsp. dried if fresh is not available)
  • 1/4 cup salsa (I used Pace Picante)
  • A few shakes of black pepper
  • A couple of shakes of Tony Chacheros (or 1/8 tsp. cayenne pepper)
  • 1/2 tsp. cumin
  • Corn tortillas
  • Avocado (optional)
  • Put a little oil in the bottom of your soup pot and cook the chicken until it turns white. Add onions, saute until translucent and add garlic, saute a few more minutes.

    Add chicken broth, lime juice and zest, beans, tomatoes, carrots, celery, salsa, spices and cilantro.

    Heat to simmering, then turn on low and let the carrots and celery cook and the flavors meld for an hour or two for best results. It could also be put into a crockpot on low and it would be ready when you got home.

    Cut up corn tortillas into thin strips. Cut up the avocado into small chunks. These can be used as a soup garnish.

    Tortilla chips broken into small pieces are also good rather than the tortillas. This recipe makes lots.
