Recipes Using Chicken Quarters
I have an abundance of chicken quarters in my freezer. There is only my husband and I but I would like some ideas on how to spice these up a little. Any suggestions appreciated!

In a small microwave bowl melt white chocolate chips separately on on high about 30-45 seconds or till smooth stirring half way through cooking time. Place nuts on piece of waxed paper. Spray cookie sheet with non-stick cooking spray or lightly butter pan.
Dip each cookie half way in white chocolate and place each on cookie sheet. freeze for 30 minutes or till chocolate is frozen solid.
In a small microwave bowl melt semi sweet chocolate chips in on high in microwave 30-45 seconds or till smooth and melted, stirring half way through cooking time. Dip each pretzel 1/2 way up the white chocolate dip end.
Place on prepared cookie sheet and freeze at least 30 minutes till frozen solid. Then melt semi sweet chocolate chips as above and dip each pretzel 1/4 the way up the white chocolate dip. Lightly press into chopped nuts lightly shaking off excess nuts onto waxed paper and freeze on cookie sheet again for 30 minutes or till frozen solid.

Date Pudding I
Ingredients and Directions
Combine the water and dates. Add the soda. Set aside.
Cream together:
Add:
Stir well. Pour into greased 9x9 pan. Bake at 350 degrees for 30 minutes. When cool, cut or break into bite-size pieces. In a glass serving bowl, layer the pieces with whipped topping. Serves 10-12

Date Pudding II
Ingredients
Directions
Cream first 4 ingredients together.
Soak 1 cup dates in boiling water and add 1 tsp. soda
Add alternately with 1 1/2 cup flour, mixed with 1 tsp. baking powder and 1/2 cup nutmeats.
Bake in wax-lined glass pan at 325 degrees F until done - approx. 30-40 minutes. Cool.
Add topping of:
Cook until thickened. Spread over cake, cool, cut in squares and top with Cool Whip on each.

With sharp knife cut each potato from the top to 1/8 from the bottom making a circle in center of potato leaving 1/8 inch of potato in tact on sides. Wrap each potato in foil and bake at 400 degrees F for one hour or till potatoes are tender but not mushy. Remove from oven and allow to cool until potato can be handled.
Turn off oven and turn broiler on. Carefully remove portion of each potato and place in large mixing bowl. (You will have a potato shell remaining.) Set shells aside. Place all remaining ingredients into bowl with potato and mix well. Mixture should be smooth but not mushy. Spoon 1/4 of mixture into each potato shell and place on foil lined cookie sheet Place under broiler just till warm and cheese is melted about 2-3 minutes.

On individual serving plates mound 1/4 of crushed cookies Then spoon 1/4 of pudding onto the mound of crushed cookies. Next sprinkle 1 1/2 teaspoons chopped nuts and then half the chopped candy bar. Top with 1/2 teaspoon whipped topping and lastly sprinkle each with remaining chopped nuts and candy bar, crushed cookie and remaining whipped topping.

Melt chocolate and butter. Beat eggs until foamy, add sugar, 2 Tbsp. at a time and heat until thick. Blend in chocolate. Add flour, baking powder, salt and cinnamon- blend. Stir in vanilla. Drop by teaspoon. Put pecan on top of each cookie. Bake at 350 degrees F until cookies are set. About 8-10 minutes. DO NOT OVERBAKE!

Mix together all fruits and coconut. Place sponge cakes on individual serving plates. Spoon 1/4 of each pudding cup onto sponge cakes. Then spoon 1/4 of the fruit mixture onto this. Lastly Spoon 1/4 of whipped topping on top. If desired, sprinkle 1 Tablespoon chopped macadamia nuts onto the cakes after the topping.

Combine cookies, margarine, and mix well. Press 3/4 into 9x13 pan. Add flavoring to Cool Whip and mix with sherbet. Spread over crust. Spread remaining crumbs on top and freeze. Remove from freezer a few minutes before cutting and serving.
