How To Make Crispy Microwave Pizza Crust

My mom needs to gain weight so her doctor told her to eat lots of pizza(wouldn't you love to hear your doctor say that!). It's way too hot here to use the oven so we've been making them in the microwave. Not as good as the oven but not too bad either. One problem: the crust doesn't get too crispy, even the types that are made for the micro. Does anyone have a remedy for this? Thanks!

Shower Fruit Punch

Inexpensive and tasty punch for showers:

Ingredients

  • 2 1/2 cups white sugar
  • 6 cups water
  • 2 - 3 oz. packages strawberry Jello

Directions

Boil these for 3 minutes and freeze until ready to use.

To serve: add 1 Lemon-lime soda (2 liter) and Raspberry Sherbet (1/2 a quart or less-optional). This freezes to a slushy consistency and makes a great punch for showers, etc.

Spicy Nacho Bake

Ingredients

  • 2 lb. ground beef
  • 2 large onions, chopped
  • 2 large green peppers, chopped
  • 2 cans diced tomatoes, undrained (28oz. each)
  • 2 cans hot chili beans (15oz. each)
  • 2 cans black beans, rinsed and drained (15oz. each)
  • 2 cans whole kernel corn, drained (11oz. each)
  • 2 cans tomato sauce (8oz. each)
  • 2 envelopes taco seasoning
  • 2 packages. spicy nacho tortilla chips
  • 4 cups shredded cheddar cheese

Directions

In a Dutch oven or large kettle, cook the beef, onions and green peppers over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes (mixture will be thin). In each of two greased 9x13 inch baking dishes, layer 5 cup of chips and 4 2/3 cup meat mixture. Repeat layers. Top each with 4 cups of chips and 2 cups of cheese. Bake, uncovered, at 350 degrees F for 20-25 minutes or until golden brown.

Cheddar Biscuit Peach Cobbler

Ingredients

  • 4 lb. fresh peaches, peeled and sliced or 8 cups frozen
  • 2 Tbsp. lemon juice
  • 1/2 tsp. almond extract
  • 1 1/2 cup sugar
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 3 Tbsp. cold butter
Cheddar Biscuits:
  • 2 cups biscuit/baking mix (like Bisquick)
  • 1 cup shredded cheddar cheese
  • 2/3 cup milk
  • 1 Tbsp. butter, melted

Directions

In a large bowl, combine the peaches, lemon juice and extract. Transfer to a greased 9x13 inch baking dish. Combine the sugar, cornstarch and salt; sprinkle over peaches. Dot with butter. Bake, uncovered, at 400 degrees F for 15 minutes.

Meanwhile, in a bowl combine biscuit mix and cheese. Combine milk and butter; stir into biscuit mixture just until blended. Drop by tablespoonfuls onto hot peach mixture. Bake 20-25 minutes longer or until biscuits are golden brown.

Pork Chops in Roasted Onion Sauce

Ingredients

  • 6 boneless pork chops (about 1-1/2 lbs.)
  • Paprika
  • 1 Tbsp. vegetable oil
  • 1 jar (14 oz.) "Pace Mexican Creations" Sweet Roasted Onion and Garlic cooking sauce

Directions

Season pork chops with paprika. In a 12-inch skillet over medium-high heat, heat oil. Add pork chops and cook 15 minutes or until well browned and almost done. Add sweet roasted onion and garlic cooking sauce. Heat to a boil. Simmer 5 minutes or until chops are done. Serve with hot mashed potatoes. Serves 6

Dijon Green Beans

Ingredients

  • 1 1/2 lb. fresh green beans, trimmed
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. olive oil
  • 2 tsp. Dijon mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup grape tomatoes, halved
  • 1/2 small red onion, sliced
  • 2 Tbsp. grated Parmesan cheese

Directions

Place beans in a large saucepan; cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Meanwhile, for dressing, whisk the vinegar, oil, mustard, salt and pepper in a small bowl. Drain beans, place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss to coat. Sprinkle with Parmesan cheese.

Cake Mix Cookie Bars

Ingredients

  • 1/2 cup butter
  • 1/2 cup packed brown sugar
  • 2 tablespoons water
  • 1 egg
  • 1 (18.25 ounce) package white cake mix
  • 1 cup chopped walnuts
  • 2 cups semisweet chocolate chips

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan. In a large bowl, cream together the butter and sugar until light and fluffy. Mix in water and egg, then stir in cake mix. Finally, mix in nuts and chocolate chips. Spread mixture into pan. Bake for 30 to 35 minutes in the preheated oven. Cool completely before cutting into bars.

I also have made this with 1 cup of candy bars crushed instead of chips or nuts. I have used butter finger candy bars and peanuts. I use yellow cake mix. Try different stuff, easy recipe. Yummy.

Triple Apple Pie

Ingredients

  • 5 1/2 cups thinly sliced peeled tart apples
  • 1/4 cup apple cider or juice
  • 1/3 cup apple jelly, melted
  • 1 cup sugar
  • 3 Tbsp. flour
  • 1 Tbsp. quick cooking tapioca
  • 1/8 tsp. salt
  • pastry to double crust pie (9inch)
  • 2 Tbsp. butter

Directions

In a large bowl, combine the apples, cider and jelly. Combine the sugar, flour, tapioca and salt; add to apple mixture and toss gently to coat. Let stand for 15 minutes. Meanwhile, line a 9 inch pie plate with the bottom pastry; trim pastry even with edge of plate. Add filling; dot with butter. Fold out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top. Cover edges loosely with foil. Bake at 400 degrees F for 20 minutes. Remove foil; bake 30-35 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

Sweet and Sour Meatballs

Sweet and Sour Meatballs I

Ingredients

  • 1 lb. ground beef
  • 1 cup milk
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup cracker crumbs
  • 1 cup ketchup
  • 1/2 green pepper (diced)
  • 1/2 cup sugar
  • 1/4 cup vinegar
  • 3 Tbsp. Worcestershire sauce
  • 1/2 cup chopped onions

Directions

Shape ground beef, milk, salt, pepper, cracker crumbs into meatballs. place in baking dish single layer. Put sauce mixture over meatballs and bake 1 hour at 350 degrees.

Sweet and Sour Meatballs II

Ingredients

  • 1 lb. hamburger
  • 1/4 cup milk
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. Worcestershire sauce
  • 1/3 cup dry bread crumbs or oatmeal
  • 2 Tbsp. onion, chopped
  • 1 egg
  • 1/2 cup brown sugar, packed
  • 1 Tbsp. cornstarch
  • 1 can chunk pineapple, undrained (13oz.)
  • 1/3 cup vinegar
  • 1 Tbsp. soy sauce
  • 1/2 cup green pepper, chopped

Directions

Combine hamburger, mil, salt, pepper, Worcestershire sauce, bread crumbs, onion and egg. Shape into 20 balls. Cook over medium heat, turning occasionally, until brown, about 20 minutes. Remove from skillet; drain fat from skillet. Mix brown sugar, and cornstarch in skillet; stir in pineapple, vinegar and soy sauce. Heat to boil, stirring constantly. Reduce heat; add meatballs. Cover and simmer 10 minutes, stirring occasionally. Add green pepper; cover and simmer about 5 minutes more.
