Panhandle Pudding Cake

Ingredients
  • 2 cups flour
  • 2 cups sugar
  • 2 Tbsp. cocoa
  • 6 eggs
  • 1/2 lb. butter
  • 1/2 tsp. salt
  • 1 tsp. vanilla

Directions

Use a deep oven safe bowl to mix the first 3 ingredients together. Add the remaining ingredients. Bake in the mixing bowl at 350 degrees for 30 to 45 minutes. The longer it bakes- more cake, less pudding.

I made this and took it out of the oven after 35 minutes. Too late I realized we preferred less pudding and more cake BUT it turned out fine. I kept the bowl in the fridge. When I wanted a serving I scooped some into a pyrex cup and microwaved it for 2 minutes. It rose high into a rich yummy cake. After a while, I started experimenting, adding miniature marshmallows, chopped nuts, and chocolate chips. This is a fun recipe- very easy and with a good flavor. You just might have to experiment a bit to get the timing the way you like it.
