Today's Recipes


Chocolate Date Cake

Ingredients

  • 1/2 lb. cut up dates + 1 teaspoon baking soda
  • 1 cube butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • a pinch of salt
  • 1 Tbsp. baking cocoa
  • 1 Jumbo Hershey bar
  • Walnuts

Directions Pour 1 cup boiling water over dates and soda - let stand. Melt 1 cube butter or margarine (not whipped) and pour over 1 cup white sugar. Beat 2 eggs and add to sugar mixture Mix in 1-1/2 cups flour, a pinch of salt and 1 Tablespoon baking cocoa to mixture. Pour off water from dates for liquid and beat. Add dates and mix in. Pour into greased and floured 11x13 pan. Chop 1 cup walnuts and sprinkle over batter. Chop a JUMBO Hershey bar and put on top of walnuts Bake at 375 degrees F for 30 minutes or until toothpick comes out clean. Let cool in pan. cut like brownies. ENJOY With a cold glass of milk! Peanut Butter Fingers

<font class="titlegreen">Ingredients</font>

<ul type="circle">
<li>1 cup all purpose flour</li>
<li>1 cup rolled oats</li>
<li>1/2 cup sugar</li>
<li>1/2 cup brown sugar (firmly packed)</li>
<li>1/2 tsp. soda</li>
<li>1/4 tsp. salt</li>
<li>1/3 cup peanut butter</li>
<li>1/2 cup margarine or butter (softened)</li>
<li>1/2 tsp. vanilla</li>
<li>1 egg</li>
<li>1 pkg. chocolate chips</li>
</ul>



<p align="left">
<b>Glaze:</b></p>
<ul type="circle">
<li>1/3 cup powdered sugar</li>
<li>2 Tbsp. peanut butter</li>
<li>3-5 tsp. milk</li>
</ul>

<P><font class="titlegreen">Directions</font>


<p align="left">
Heat oven to 350 degrees. Grease a 9x13 inch pan. Lightly spoon flour into measuring cup; level off. In a large bowl, combine all ingredients except chocolate chips at low speed until mixture resembles coarse crumbs. Press into bottom of prepared pan. Bake at 350 degrees F for 15 to 20 minutes or until golden brown. Sprinkle immediately with chocolate chips. Let stand 5 minutes; spread evenly. In small bowl, combine all glaze ingredients; drizzle over chocolate frosting. Cool completely; cut in bars. Makes 36 bars.

Snowball Cookies

Ingredients

  • 2 cups flour
  • 2 cups pecans (chopped)
  • 1/4 cup sugar
  • 1 cup butter (softened)
  • 1 tsp. vanilla
  • Powdered sugar

Directions

Mix well, then roll into balls. Bake at 325 degrees for 18 to 25 minutes. Roll in powdered sugar while still warm and again when cooled.

Snicker Cookies

Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 3/4 cup margarine
  • 1/2 cup peanut butter (honey nut)
  • 2 tsp. vanilla
  • 2 eggs
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 1/2 cups flour
  • 1/2 cup oatmeal

Directions

Cut fun-size Snicker into 1/3's. Roll dough around into a circle. Bake 10 minutes at 350 degrees.

Sandies

(from the early 1950's)

Ingredients

  • 1 cup butter (2 cubes)
  • 1/4 cup powdered sugar
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 Tbsp. water
  • 1 cup chopped nuts
  • (optional)1 tsp. cinnamon, 1 tsp. allspice or cloves, etc.

Directions

Cream 1 cup butter and 1/4 cup powdered sugar. Add 2 teaspoons vanilla, 2 cups flour, 1 Tablespoon water. Mix well.

Add 1 cup chopped nuts. Optional add 1 teaspoon cinnamon, allspice or cloves etc.

Form into small balls, flatten slightly. Bake on ungreased cookie sheet. 300 degrees F for 20 minutes or until delicately browned. While hot, roll in powdered sugar. I let them cool and roll again in the powdered sugar.

(Instead of rolling, I use a paper bag and shake them gently to coat them.)

Best Chicken Sandwiches - Italian Cheesy Chicken Sandwiches

Ingredients

  • 4 crusty Italian sandwich rolls
  • 4 boneless, skinless chicken breasts, washed and patted dry
  • 2 cups ground corn flake crumbs
  • 3 Tablespoons Dried Italian seasoning mix (Good Seasons Italian dressing mix is the best)
  • 1 clove garlic, peeled and minced
  • 4 beaten eggs
  • 2-3 Tablespoons Extra virgin olive
  • oil
  • 1 cup sliced mushrooms such as portabella or puchini
  • 2 cups shredded mozzarella cheese
  • 2 plum Tomatoes, sliced thinly
  • 1 Cucumber, Seeded and cut into thin slices

Directions

In Medium skillet, heat half of the oil. Cook garlic and mushrooms for just 3 minutes or til garlic is tender. Do Not Burn. Remove from skillet and set aside.

Place eggs in large bowl and beat. Place seasoning and crumbs together on large plate. Dredge chicken breasts in egg and then crumb mix. Heat remaining oil in pan and brown chicken over medium heat for about 10 minutes on each side or til cooked through. Do Not over cook. Open rolls and place one chicken breast in center of each, sprinkle with mushroom garlic mixture and then shredded cheese.

Place under broiler for 2-3 minutes til bubbly. Place tomato and cucumber on sandwich and serve with whipped cream cheese to spread on sandwich.

You can also make the following spread instead of cream cheese.

Ingredients

  • 1 pkg Italian dressing mix
  • 2 cups sour cream
  • 1/2 onion diced

Directions

Mix together and spread on top of chicken and cheese before garnishing. Serves 4.
