Baked corn dogs using jiffy mix did not work when I tried it. Sounded too easy, should have known better.
You might try searching under wrapped corn dogs. That uses a yeast dough. I always loved the ones they served in the school cafeteria when I was growing up.

Baked Corn Dogs
2 boxes corn muffin mix (recommend Jiffy)
2 eggs
1 1/4 cup milk
1/2 stick butter melted
1Tbsp Chili powder
2 tsp cumin
2 tsp cayenne pepper sauce (recommend Tabasco or FranksRed Hot Sauce
8 jumbo franks (your choice)
preheat oven to 400 .F
In shallow dish combine muffin mix, eggs, milk and melted butter. Add seasonings
Coat franks and place on nonstick cookie sheet
coat shy of 1/2" Bake for 12-15 min
