Potato Cabbage Surprise

The surprise is that even people who normally shun cabbage, will enjoy this dish. I love potatoes but try not to overdo it. The potato taste dominates and makes this such a great comfort food. You can add any leftovers to broth or other soup, too, to make a creamy and delicious soup.

Ingredients:

  • One small or 1/2 large cabbage, cored and cut into chunks
  • The same amount of scrubbed boiling potatoes*, also cut into chunks
  • Several cloves of garlic, roasted or raw according to your taste
  • 1/2 tsp. each herb salt and plain salt, or to taste
  • 1-2 Tbsp. butter
  • Chopped parsley, to taste
*Leave skin on red potatoes, adds attractive flakes of pink

Directions:

Steam potatoes and cabbage together, until both are soft. Puree all but parsley in food processor; add parsley at end.

Servings: 4
Time:10-15 Minutes Preparation Time
20-30 Minutes Cooking Time

And you could turn it into a cream soup by adding milk and mashing a bit of the potato instead of pureeing, and grate a little cheese on top.

I will try that tomorrow. I have all the ingredients.
