Rhubarb Cobbler

Cobbler

Ingredients

  • 4 1/2-5 cups finely chopped rhubarb
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 egg, slightly beaten
  • 1/2 cup milk
  • 1 cup flour

Directions

Spread rhubarb evenly in greased cake pan. Combine the rest of ingredients and spread over rhubarb.

Topping

Ingredients

  • 1/2 cup brown sugar
  • 1 Tbsp. cornstarch
  • pinch salt
  • 1 cup water

Directions

Mix sugar, cornstarch and salt. Sprinkle over batter. Pour water evenly over all. Bake at 375 degrees F for approximately 1 hour or until golden. Serve warm with milk.

Rhubarb Cobbler

Ingredients

  • 1 1/2 cups biscuit mix
  • 3 1/2 Tbsp. sugar
  • 3 Tbsp. vegetable oil
  • 1/2 cup milk
  • 1 egg
  • 1 qt. fresh rhubarb
  • 1 cup sugar

Directions

Preheat oven to 400 degrees F. Cut rhubarb into 1/2 inch pieces and line bottom of greased 9x13 inch dish. Sprinkle 1 cup sugar over top. Combine biscuit mix, sugar, oil, milk and egg. Pour over rhubarb. Bake 15 minutes at 400 degrees F and then 15 minutes at 350 degrees F.
