Orzo Taco Soup

Ingredients

  • 1 lb. ground beef,
  • onion, minced
  • 1 clove garlic
  • salt and pepper, to taste
  • 4-6 cups water
  • 1 envelope McCormick Au Jus mix
  • 1 envelope taco seasoning
  • 1 large can tomatoes, your choice, chunky, diced etc,
  • 1 can veg all or frozen mixed veggies (I prefer frozen)
  • 1/2 cup frozen corn

  • 1/2 box orzo pasta

Directions

Saute beef in a stock pan with minced onion and clove of garlic, add salt and pepper to taste, drain fat. Add water, start with 4 and add more later if needed. Add Au Jus mix, taco mix, tomatoes, veg all or frozen mixed veggies, and corn. Bring to a boil, turn down slightly and add a half or box of orzo macaroni, cook until orzo's are done. The whole thing takes about a half hour start to finish and makes a hearty meal.

Serve in a bowl, put bowl on a plate and surround with nachos. Top with shredded cheese of your choice.

Options: This is one of my family's favorite soups, I make variations of it. You can leave taco flavoring out, you can add mushrooms, and any other veggie you want, you can also add more or less orzo depending on how thick you want your soup, we like it thick.
