Freezing Mashed Potatoes
Can you freeze mashed potatoes? I was thinking about making a LARGE batch and freezing so we can use portions as we need without making them each time.

Meal Ideas For Top Teeth Being Removed
I hope someone can help. My daughter has to get all her top teeth removed tomorrow, due to Chemo and the need of long term use of steroids. She is 24 and petite.
I need some ideas for soft, healthy and appealing meals that also contain the essential food groups. I know of the protein meals and milk and banana smoothies etc. She is not big on milk but loves her steak, fish, chicken. I am looking for finger-food styles as she will not be able to eat vast amounts. She is turned off by the thought of baby-food style mush.
Can someone help her please?

Recipe For Cabbage Bread Rolls
We had a neighbor that did a lot of baking. She used to make 'cabbage rolls', but they were an actual bread dinner-type roll. Definitely not the cabbage rolls w/ cabbage leafs rolled w/ beef inside. This was an actual roll w/ possibly cabbage cut up in it. Anyone have any feedback?

Pie Dough Using Boiling Water
Does anyone have a recipe for pie dough using hot or boiling water? I had a recipe and then misplaced it. I could rework the dough and it still came out flaky.

Double Decker Pumpkin Pudding
Ingredients
- 1 can (16 oz.) pumpkin
- 3/4 cup sugar
- 1 can evaporated milk (5-1/3 oz.)
- 2 eggs
- 1/4 cup margarine, melted
- 1 tsp. pumpkin pie spice
- 1/2 cup finely chopped nuts
- 1 package spice cake mix (1 layer size)
- Whipped cream, optional
Directions
In a large bowl, mix pumpkin, sugar, milk, eggs, butter and pumpkin pie spice. Beat until well mixed. Fold in the nuts. Pour into a greased 13 x 9-inch baking pan.
Prepare cake mix according to package directions. Spread cake batter over pumpkin mixture. Bake, uncovered at 325 degrees F until cake tests done, about 45 minutes.
If desired, top with whipped cream or Cool Whip.
Serves: 12

Cottage Cheese Spinach Squares
Ingredients
- 1 package frozen spinach, thawed and squeezed (10 oz.)
- 1 1/2 cup cottage cheese, undrained
- 4 eggs, well beaten
- 4 oz. shredded cheddar cheese
- 1/2 tsp. onion powder
- 1/8 tsp. pepper
- 1/4 tsp. salt
- 1/4 tsp. dill weed
- 1/4 cup bread crumbs
Directions
Beat eggs and add all ingredients. Cover with foil and refrigerate overnight. Uncover and put in 8 inch baking dish. Bake at 325 degrees F for 40-50 minutes. Cool 10 minutes. Cut in squares.

Stuffed Flounder
Ingredients
- 4 flounder with pockets
- 1/2 cup melted butter
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 cup chopped onion
- 1/4 cup melted butter
- 2 cups diced shrimp
- 1 cup cubed Cheddar cheese
- 2 Tbsp. parsley
- 2 tsp. mustard
- 1/2 tsp. salt
- pepper
Directions
Wash flounder, then salt, pepper and brush with butter. Place in well greased flat pan. Saute' onion in butter. Add to remaining ingredients and mix well. Fill flounder pocket. Bake at 350 degrees F for 25-30 minutes or until flounder flakes easily.

Pasta Fagioli
This a recipe that my MIL shared with me. It's her family's version of Pasta Fagioli. It's really inexpensive to make and tastes sooo good.
Ingredients
- 1 lb. Great Northern beans
- 2 Tbsp. tomato paste
- 2 Tbsp. salt
- 1/2 Tsp. basil
- 1/2 Tsp. oregano
- 2 Tbsp. granulated or powdered garlic. (Not garlic salt)
- 1 cup olive oil
- 1 box medium shell pasta
- 4 qts. water
Directions
In a crock-pot, put in all ingredients except pasta. Cook in crock pot for 3-5 hours or until beans are to your desired consistency. In a separate pot on the stove, cook pasta according to the directions on the box. Add pasta to bowls and spoon bean mixture over pasta and mix well. Serve with warm bread or salad.
I love this meal and even my 3 year old daughter loves this. I love to add a couple of splashes of hot sauce to mine. Hope you all enjoy! :o)

Yam Souffle'
Ingredients
- 3 lb. yams
- 1 cup melted butter
- 1 1/2 cups powdered sugar
- 1/2 tsp. nutmeg
- 1 1/2 tsp. grated lemon peel
- 6 eggs, separated
- dash cloves
Directions
Boil yams until tender. Peel and mash or beat with electric blender. Stir in melted butter, sugar, nutmeg, lemon peel and egg yolks. Cool slightly and fold in stiffly beaten egg whites. Pour into greased 1 1/2 qt. casserole. Bake at 325 degrees F for 1 hour, uncovered.

Seafoam Icing
Ingredients
- 1 lb. light brown sugar
- 1/2 cup water
- pinch of salt
- 4 egg whites
- 1 tsp. vanilla
Directions
Mix sugar, water, salt and egg whites thoroughly. Cook in double boiler over rapidly boiling water for 7 minutes, beating constantly with electric beater. Take off heat and blend in vanilla.

Cauliflower and Carrot Casserole
Ingredients
- 1 package frozen cauliflower or 1/2 head of fresh cauliflower
- 4-5 medium carrots
- 1 can cream of mushroom soup
- 1/2 cup grated Cheddar cheese
- Parmesan cheese
Directions
Cook cauliflower according to package directions or boil fresh until tender. Boil carrots until tender. Place carrots and cauliflower, broke into flowerets, in 1 1/2 qt. casserole, mix with mushroom soup and cheddar cheese. Sprinkle Parmesan cheese on top. Bake at 350 degrees F for 30 minutes.

Caramel Brownies
Caramel Brownies I
Ingredients
- 1 pkg. German chocolate cake mix
- 1/3 cup evaporated milk
- 3/4 cup margarine
- 1 pkg. caramels
- 1/2 cup evaporated milk
- 1-2 cup chocolate chips
Directions
Mix together cake mix, 1/3 cup evaporated milk and margarine; put in 9x13 greased pan. Bake 6 minutes. Let cool. Melt caramels with 1/3 cup evaporated milk.
Microwave 3-4 minutes, stir occasionally. Pour over cooled mixture. Sprinkle with chocolate chips. Can also use nuts, if desired. Crumble remaining mixture on top. Bake about 18 minutes more.

Caramel Brownies II
Ingredients
- 4 cups brown sugar
- 1 cup butter
- 2 cups chopped pecans
- 2 cups flour
- 4 eggs
- 1/4 tsp. baking powder
- powdered sugar
Directions
In a saucepan melt sugar and butter together. Stir in pecans. Place in mixing bowl and blend in flour. Add eggs 1 at a time, beating after each. Add baking powder. Pour into greased cookie sheet with sides and bake at 325 degrees F for 30 minutes. Do not overcook! Cut in squares while still warm and sprinkle with powdered sugar.

Beans and Ground Beef Chili
Ingredients
- 1 lb. lean ground beef
- 1 Tbsp. olive oil
- 1-1/2 pound tomatoes
- 1 medium onion, chopped
- 3 green chilies chopped
- 4 cloves garlic, finely chopped
- 2 cans (15 oz. ea.) red kidney beans
- 2 Tbsp. cumin, ground
- 1/4 tsp. cumin seeds
- 1/4 tsp. caraway seeds
- 3 Tbsp. oregano
- 1 tsp. cayenne pepper
- 2 tsp. dried tarragon leaves
- 1/2 tsp. allspice
- 1/4 tsp. black pepper
- 2 tsp. coarse sea salt
Directions
Puree the tomatoes in a blender or food processor. Brown the beef in the olive oil for 2 to 3 minutes. Add 1 Tbsp. ground cumin, the cumin and caraway seeds, and the chopped onion. Stir-fry for two minutes. Add the tomatoes, chilies, garlic, beans, and the rest of the spices. Bring to a simmer. Simmer, uncovered, for about 15 minutes.
