Dissolve gelatin in water and let cool until slightly thick. Beat cottage cheese in a bowl until very fine. Add cooled gelatin, Miracle Whip, milk, pineapple and horseradish. Refrigerate.
A variation of something I grew up on. Very good salad.
Ingredients:
1 (3 oz.) pkg. lemon gelatin
1 (3 oz.) pkg. lime gelatin
1 (20 oz.) can crushed pineapple, undrained
1 (16 oz.) carton cottage cheese
1 can sweetened condensed milk
1 cup salad dressing
1 Tbsp. horseradish
1/2 cup chopped nuts
2 cups mini marshmallows
Directions:
Dissolve lemon and lime gelatin in 2 cups boiling water. Stir in pineapple and let cool until partially set. Combine cottage cheese, condensed milk, salad dressing, horseradish, and nuts. Add to gelatin mixture. Blend well. Sprinkle marshmallows over top and refrigerate until set.

Ingredients:
3 oz. pkg. orange Jello
1 carton cottage cheese
1 small carton Cool Whip
1 can Mandarin oranges
1 cup crushed pineapple
Directions:
Mix Jello with 1 cup boiling water until dissolved. Set aside to cool. Then add oranges and pineapple juice and all. Add cottage cheese. When this is slightly set add the Cool Whip and stir until mixed thoroughly.

This jello salad can be made with any flavor jello, also with any type of nuts and canned fruits. (05/25/2005)
I keep a bowl of this salad in my fridge in the summer especially. Each time I make it with a different flavor of jello and fruit. It's so refreshing that sometimes I have it for breakfast. It's a good source of protein. (05/25/2005)
