Strawberry Cake

Strawberry Cake I

Ingredients

  • 1 box French Vanilla cake mix
  • small box of strawberry Jello
  • 4 eggs
  • 3/4 cup vegetable oil
  • 16 oz. frozen strawberries

Directions

Beat all ingredients except strawberries for 3 minutes. Then beat in strawberries for 2 minutes. Bake in bundt pan at 350 degrees F for 55 minutes.

For Frosting: Take a small container of cream cheese, one stick butter or margarine and one lb. of powdered sugar. Beat together until creamy. Enjoy!

Strawberry Cake II

Ingredients

  • 1 package white cake mix
  • 1 small package strawberry gelatin
  • 3/4 cup oil
  • 3/4 cup milk
  • 4 eggs, separated
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 2 cups halved strawberries
  • 1/2 stick margarine, softened
  • 1 box confectioners' sugar

Directions

Combine cake mix and gelatin in large bowl. Add oil, milk and egg yolks, stirring just to mix. Combine coconut, pecans and strawberries in bowl, mixing well. Add half the strawberry mixture to batter, reserving half for frosting. Beat egg whites in small bowl until stiff but not dry. Fold into batter. Pour into 3 greased and floured 8 inch cake pans. Bake at 350 degrees F for 20-25 minutes or until cake tests done. Cream margarine in bowl. Blend in confectioners' sugar and remaining strawberry mixture. Frost cooled cake.

This cake is wonderful. My mother made it for years before she passed away. She made it in a sheet cake pan and did not put cream cheese in the icing. It will be a hit where ever you take it. Joyce
