Ingredients
- 1 1/2 pounds ground beef
- 1/2 cup milk
- 3/4 cup seasoned bread crumbs
- 2 Tbsp. parsley
- 1 tsp. each, salt, pepper
- 1/4 cup margarine
- 1 can sliced mushrooms, drained
- 2 onions, sliced
- 3 green peppers, cut into strips
- 3 tomatoes, quartered
- 1 Tbsp. soy sauce
- 1 10 oz. can beef broth
- 1/4 cup burgundy
- 3 Tbsp. corn starch
Directions
Combine first 6 ingredients in bowl, mix well. Shape into 1-inch balls. Brown in margarine in skillet. Add vegetables and saute until tender. Stir in the next 3 ingredients with 1/3 cup of water. Simmer for 20 minutes. Blend cornstarch with 1/4 cup cold water in a small bowl until smooth. Pour cornstarch glaze over meat balls and vegetables. Cook 2-3 minutes. Serve over rice.
Yields 8 servings/about 370 calories.
