Peanut Rolls (Southern Illinois Recipe)
Ingredients
- 4 eggs
- 2 cups sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2 cups flour
- 1 cup boiling water
- 2 tsp. vanilla
- peanuts, crushed or ground
Directions
Beat eggs until fluffy, add sugar gradually. Add water, vanilla, then dry ingredients.
Bake in sheet pan. When cool, cut into squares and spread with the following.
- 1 lb. Powdered sugar
- 1 stick oleo (margarine)
- milk (add a few tablespoons at a time until desired thickness)
This won't be very thick. Ice squares one at a time and roll in crushed or ground peanuts. It is helpful if you have a helper to do this!
