Melt coating ingredients over double boiler and keep over water while dipping.
Mix remaining ingredients and place in refrigerator until firm. If mixture is sticky; add powdered sugar. Make a small patty and place a maraschino cherry in center and roll into a ball. Chill and dip in chocolate (use a toothpick to dip). Drain cherries about 1 hour before covering.
Note: Paraffin wax comes in 1 lb. package. Each pound has 4 (1/4 lb.) pieces. Use 1/4 of 1 section. It is also very flammable and can cause burns if it gets on your skin.
Makes about 24 covered cherries

Ingredients
Fondant:
3 Tbsp. butter or margarine
1/4 cup evaporated milk
1 tsp. vanilla
1/2 tsp. salt
4 1/2 cups powdered sugar
Chocolate Covered Cherries:
24 maraschino cherries
1 package semi-sweet chocolate chips
1 cup fondant
Directions
Melt in saucepan over low heat, 3 tablespoons of butter or margarine. Stir in evaporated milk, vanilla, salt and remove from heat. Gradually add powdered sugar. Turn out on board lightly sprinkled with powdered sugar and work with hands until smooth. Drain cherries thoroughly. Cover each cherry by shaping 2 tablespoons of fondant around each cherry. Heat chocolate chips over hot water until entirely melted. Drop fondant-covered cherries into melted chocolate. Remove from chocolate with two forks. Place on waxed paper to cool.
