Recipe: Mexican Casserole

Mexican is one of my favorite foods, so I guess it makes sense that I would like Mexican casserole! :)
Ingredients:
- Crust:
- 1/4 cup flour
- 1/4 cup corn meal
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 cup shortening
- 1/2 carton sour cream (reg. size)
- 1 egg
Filling:
- 1 lb. ground beef, browned
- 1/2 cup chopped onion
- 1 tsp. salt
- 2 tsp. chili powder
- 1/4 tsp. Tabasco sauce
- 1 can kidney beans (undrained)
- 1 can tomato paste (6oz.)
Directions:
Stir crust ingredients until blended. Spread thinly on sides and bottom of a greased pie plate. Mix rest of ingredients and put in crust. Bake for 30 minutes at 350 degrees F. Top with chopped lettuce, tomatoes, grated cheese after baking. Serve with taco chips.

Recipe: Hamburger Mexican Casserole

Ingredients
- 1 1/2 lb. hamburger
- 2 cans cream of mushroom soup
- 1/2 cup heavy cream
- 1/2 cup water
- 1 1/2 onions, chopped
- 1 cup tomatoes
- 1 1/2 packages tortilla chips
- 1/4 lb. grated cheese
Directions
Layer this twice, starting with the tortilla chips. Bake for 30 minutes at 350 degrees F. Serves 6.

Recipe: Mexican Beef Casserole

Ingredients:
- 1 lb. hamburger, browned
- 1 can ranch beans (I use a bigger can when I need to feed more people)
- 1 package taco seasoning
- 1 small can tomato sauce OR Rotel tomatoes
- 1 small can water
- grated cheese
- flour tortillas
Directions:
Mix hamburger and beans in fry pan. When hot add taco seasoning and hot water and sauce or tomatoes. Simmer for a few minutes. This will be layered in a dish with cheese and tortillas, ending with cheese. The size dish depends on how many beans and how many tortillas you added. Bake for 30 minutes in 350 degree F oven or microwave for 10 minutes.

Ingredients:
- 1 pound hamburger
- 1 can Rotel tomatoes
- 1 can cream of mushroom soup
- 1 can ranch style beans
- tortilla chips
- shredded cheese
Directions:
Cook hamburger, drain. Add tomatoes, soup and beans line bottom of casserole dish (9x13 inches) with tortilla chips then beef mixture. Cover with shredded cheese and bake at 350 degrees F until cheese melts.

Ingredients:
- 1/2 cup flour
- 1/2 tsp. baking powder
- 2 Tbsp. margarine
- 1/2 cup sour cream
- 1 egg, beaten
- 5 lb. hamburger fried with 1 onion, seasoned with taco seasoning
- 3 cans refried beans
- 1 lb. fried bacon, crumbled
- 4 cups minute rice, prepared
- 2 cups chopped green pepper
- Velveeta cheese
- 3 cups sour cream
Directions:
Stir flour, baking powder, margarine, sour cream and beaten egg together. Spread dough in bottom of large roaster. Layer hamburger and onions, beans, bacon, rice, green pepper, cheese and sour cream in roaster. Bake in 350 degrees F oven for 2 1/2 hours or until heated through. Top with lettuce and chopped tomato and serve with salsa on the side.

Ingredients
- crunched up tortilla chips
- cubed or canned chicken or turkey
- canned corn (optional)
- sliced or chopped olives
- 1/2 cup picante sauce
- Spanish rice*
- more crunched up chips
- shredded cheese
*Spanish Rice: 1 cup rice/1 cup chicken broth/tomato sauce mixed = microwave 5 minutes. I used spicy tomato sauce
Directions:
Layer in casserole dish: Bake at 350 degrees F for 40 minutes. Amounts depend on size of casserole dish used.
My teenager asked for seconds!

Ingredients
- 2 lb ground beef
- 2 cans chicken broth
- 1 cup sour cream
- 1 cup (10.5 oz) tomato soup
- 1 16 oz can whole kernel corn, drained
- 1/2 small onion, diced
- 1 cup Swiss cheese shredded
- 1 pkg. taco seasoning
- 1/2 cup all-purpose flour
- 1 cup cheddar cheese, shredded
- 1 Tbsp Worcestershire sauce
- 1 red bell pepper, diced
Directions:
Brown meat and stir until crumbly, drain fat. Add taco seasoning, blend well. Add broth, flour, and tomato soup. Bring to boil to slightly thicken liquid. Stir in corn, pepper, onion, Worcestershire sauce and sour cream, blend well. Pour into 13x9x2 inch baking dish. Top with cheddar and Swiss cheese. Bake at 350 degrees F for 5-10 minutes or until cheese is melted.
