Thin Pizza Crust Recipe

Does anyone have a recipe for a thin cracker type pizza crust? I have the regular flour, yeast,sugar, salt recipe, but find them hard to roll without them springing back. I want it thin and crispy. Thanks for any help.

Marinated Carrot Salad

Ingredients

  • 2 lbs. sliced carrots.

Cook till tender, but firm. Drain and cool.

  • 2 green peppers, chopped or in rings
  • 2 onions, in rings
  • salt and pepper to taste

Dressing:

  • 1 cup tomato soup, undiluted
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1/2 cup oil

Directions

Beat dressing ingredients together. Pour over vegetables and refrigerate overnight. Yum!

Green Salad (Jello)

Ingredients

  • 1 package lime gelatin
  • 1 package lemon gelatin
  • 1 can Eagle Brand condensed milk
  • 1 pint cottage cheese
  • 1 cup mayonnaise
  • 1 can crushed pineapple
  • 1/2 cup chopped nuts, opt.

Directions

Dissolve Jello with 2 cups hot water. Let cool. Add remaining ingredients. Chill.

Spinach Salad

Ingredients

  • 1 package or bunch (washed) of fresh spinach
  • 1 can bean sprouts
  • 1/2 bottle Baco bits
  • 2 cans water chestnuts, sliced
  • 3 hard-boiled eggs, sliced

Dressing - Mix ahead:

  • 1 cup salad oil
  • 1 small onion, grated
  • 1/2 cup ketchup
  • 1/2 cup sugar
  • 1/4 cup vinegar
  • 1/4 tsp. salt

Directions

Toss salad and add dressing 10 minutes before serving. Serves 4-6

High Hat Meatloaf

Ingredients

Part 1:

  • 3 lb. hamburger
  • 2 cups seasoned croutons
  • 1 can tomato sauce
  • 1 cup chopped onions
  • 1 1/2 tsp. salt
  • 1 can finely chopped mushrooms
  • 1/4 cup chopped ripe olives
  • 1/2 cup milk
  • 1/4 tsp. pepper

Part 2:

  • 7 medium potatoes
  • 1 stick margarine
  • Add milk to mash the potatoes after they have been boiled and peeled. Salt and pepper to taste.
  • dash paprika
  • 8 oz. package cheddar cheese
  • 1 big tomato, cut into 8 wedges

Directions

Combine the first 10 ingredients. Shape into 8 loaves. Place in shallow baking pan so that they do not touch. Bake, uncovered, in 350 degrees F oven for 30 minutes. Uncover and continue baking 30 minutes at 375 degrees F. Remove from oven. Turn oven to 450 degrees F. Add mashed potatoes on top of meatloaves. Sprinkle with paprika. Top with tomato sedges; sprinkle with cheese. Bake 5-10 minutes or till potatoes and tomatoes are hot. Makes 8 good servings.

Strawberry/Pretzel Salad

Ingredients and Directions

  • 2 packages strawberry Jello
  • 1 3/4 cup hot water
  • 2 packages frozen strawberries

Mix and chill.

  • 2 1/2 cups coarse pretzels (thick sticks)
  • 3 Tbsp. powdered sugar
  • 3/4 cup melted butter

Mix into 9x13 inch pan. Bake 10 minutes at 350 degrees F. Cool.

Beat:

  • 1 package cream cheese
  • 1 egg
  • 1 cup powdered sugar

Fold in 8 oz. Cool Whip (spread on crust and chill.) Place Jello mixture on top and chill.

Vegetarian Stuffed Mushrooms (Freezer Meal)

freezer mealsThese vegetarian appetizers are as delicious as they are easy. Highly flavorful, your can guarantee your guests will go back for seconds and thirds.

List of Ingredients:

  • 2 tablespoons of olive oil
  • 1 10 oz package of mushrooms
  • 1 small onion finely diced
  • 1/4 teaspoon of garlic salt
  • 1/4 teaspoon of pepper
  • 1/2 cup of flavored breadcrumbs
  • 1/2 cup of shredded mozzarella
  • Olive oil cooking spray

Directions

  1. Preheat oven to 350 degrees
  2. Spray cookie sheet with cooking spray.
  3. Clean mushrooms. Remove and save stems.
  4. Finely chop stems.
  5. In a saucepan, sauté the onions and stems in olive oil until soft.
  6. Add garlic salt and pepper.
  7. Mix in breadcrumbs.
  8. Mix in cheese.
  9. Use a teaspoon to fill mushroom caps with stuffing.
  10. Place stuffed mushrooms on cookie sheet and spray lightly with cooking spray.
  11. Bake for 30 minutes or until brown on top.

Freeze in a single layer in a thin, covered container.

Directions for preparing frozen mushrooms:

Cooked mushrooms can be frozen and heated in a 350-degree oven for about 15 minutes.

Three Pepper Fajita Chicken (Freezer Meal)

freezer mealsThis rainbow of a low fat meal can be served as is for a delicious low-carb option, or pour over rice or wrap in a flour tortilla for a family-friendly favorite.

List of Ingredients:

  • 1 tablespoon vegetable oil
  • 2 lbs chicken tenderloins (or boneless, skinless chicken breast) cut into bite-sized pieces.
  • 1 green bell pepper, seeded and coarsely chopped
  • 1 red bell pepper, seeded and coarsely chopped
  • 1 yellow/orange bell pepper, seeded and coarsely chopped
  • 1 medium onion, coarsely chopped
  • I jar (16 oz) store bought salsa
  • 1 1/2 cups shredded Monterey Jack cheese (added after frozen meal is prepared and ready to actually serve)

Directions for preparing the meal for the freezer

  1. Over medium heat, heat oil in a large skillet. Add chicken and sauté until ALMOST cooked through.
  2. Add all remaining ingredients except cheese. Cover and simmer until chicken is no longer pink.
  3. Allow time to cool to room temperature and place in single-meal sized containers (the size of the container will depend on how many people you usually serve).
  4. Freeze.

Preparing frozen meal:

Allow time to defrost in the refrigerator or defrost in microwave until softened. Transfer from containers to large skillet and simmer until thoroughly cooked.

Serve over rice or in a wrapped in a flour tortilla, garnish with cheese.

Jello Cookie Mix

Ingredients

  • 1/2 cup sugar
  • 1 (3 oz.) jello, any flavor
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 1/2 cups flour

Directions

Layer ingredients in order given in 1 quart mason jar.

Attach following directions:

  • 1 package mix
  • 3/4 cup oil
  • 2 eggs
  • 1 tsp. vanilla

Mix all ingredients together. Roll into small balls. Place on greased cookie sheet and flatten with fork dipped into sugar.

Bake at 350 degrees F for 7-10 minutes until done, but not browned.

Swiss Chicken

Ingredients

  • 6 chicken breasts, skinned, boned and split
  • 2 beaten eggs
  • 1 cup fine, dry bread crumbs
  • 1/4 cup oil
  • 3 Tbsp. butter
  • 1/2 tsp. salt
  • 2 1/2 cups milk
  • 1 cup processed Swiss cheese
  • 1/4 cup flour
  • 1/4 tsp. pepper

Directions

Put each chicken breast between 2 pieces of waxed paper. Pound out to 1/4 inch thickness with a mallet or rolling pin. Sprinkle with salt. Dip in beaten egg, then bread crumbs. In skillet, heat oil and brown chicken. Add oil as needed. Set aside. In saucepan, melt butter. Blend flour, salt, and pepper. Add milk all at once. Cook until thick and bubbly. Remove from heat. Put half of sauce in bottom of dish, add chicken and cover with rest of sauce. Cover and chill several hours or overnight. Bake at 350 degrees F for an hour. Add cheese and return to oven until cheese melts. Garnish with sliced tomato and serve.

Apricot-Pineapple Salad

Ingredients and Directions

Jello:

  • 2 packages orange-pineapple Jello
  • 2 cups boiling water
  • 1 cup apricot and pineapple juice combined (or 1 miniature can of each)
  • 20 small or 10 large marshmallows

Dissolve Jello in water. Add juice and marshmallows, stir until dissolved. Chill till firm.

Topping:

  • 1/2 cup sugar
  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • 1 small container Cool Whip
  • 1 egg, beaten
  • 1 cup apricot and pineapple juice combined (or 1 miniature can of each)

Combine all ingredients, except Cool Whip, cook until custard-like. Stir in Cool Whip until well-blended. Spread over top of Jello that has set up. Store in refrigerator.
