Corn Dog Muffins

This is a frugal and healthier way to prepare a kids favorite, Corn Dogs

Ingredients

  • 2 Jiffy cornbread boxes
  • 1 tablespoon brown sugar
  • 2 eggs
  • 1 cup milk
  • 1 (11 ounce) can whole kernel corn, drained
  • 5 hot dogs, chopped
  • 1 cup cheddar cheese, shredded

Directions

Combine mix and brown sugar, add eggs and milk stirring only until moistened. Stir in drained corn, and most the hot dogs, and cheese. Batter will be thin. Add a few pieces of cut hot dog to each paper lined muffin cups then fill with batter 2/3 full. Bake at 400 degrees F for 15 minutes or until tops are brown. Serve immediately or refrigerate. Yields 18 muffins. Yummy and even those who aren't crazy about hotdogs will love these! Enjoy! By Andjerm from Texas
