Can I refreeze Cornish hens?

You need to cook them before refreezing to be safe and I wouldn't bother even doing that if they've been thawed for more than three days for safety sake.

I have always heard, for many years, that the only way a person should refreeze uncooked meat is if there are still ice crystals in it. (11/08/2010)

I wouldn't unless they were cooked. Personally I wouldn't even do that unless they were cooked and refrozen within at least four days! (11/09/2010)
