Our local newspaper runs really good recipes. This issue has cookies that sound so good. The readership is small, and these recipes should be shared.

Ingredients:

  • 2 egg whites (cold)
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 3/4 cup chocolate chips

Directions:

Preheat oven to 375 degrees F. Beat egg whites and salt until stiff, then beat in sugar and vanilla. Continue to beat until very stiff peaks form. Stir in chocolate chips. Drop by teaspoonfuls onto greased cookie sheet. Place in preheated oven, then immediately turn the oven off. Do not open the oven until the following day.

These are basically meringue cookies with chocolate chips, and will be crispy and chewy.

Just tried these and they're delicious! I used Truvia instead of sugar which worked just fine too! Yum!
