Baked Corn

We make baked corn at holiday meals. It's a side dish that reminds me of getting together with family.

Ingredients:

  • 1 egg
  • 1 Tbsp. sugar
  • 1/2 cup milk
  • 2 Tbsp. butter
  • 1 (16 oz.) can creamed corn
  • 1 cup Ritz or Townhouse crackers (about 27 crackers), crushed
  • Salt and pepper to taste
  • Paprika

Directions:

Crush crackers and set aside. (for less mess, put them in a ziplock bag and crush/roll them out with a rolling pin.)

Next, beat egg in a casserole dish. Be sure the dish will fit in your microwave. Stir in milk, sugar, corn, butter, crackers and salt, and pepper.

Microwave for 7 minutes. Do not cover. Stir, then sprinkle with a bit of paprika. Microwave for another 5-7 minutes. Times may vary depending on how deep or shallow your dish is. Enjoy!

Recipe: Baked Corn

Ingredients

  • 2 Tbsp. lard
  • 2 Tbsp. flour
  • 1 1/2 cups milk
  • 1 tsp. salt
  • 1/4 tsp. mustard
  • 1/4 tsp. paprika
  • 2 cups cooked corn
  • 1 egg, slightly beaten
  • 1 Tbsp. Worcestershire sauce
  • buttered crumbs

Directions

Makes a sauce of lard, flour, milk and seasonings. Add corn, egg and Worcestershire sauce. Pour into baking dish, cover with buttered crumbs and bake at 350 degrees F. for 15-20 minutes or until heated through.
