Raisin Bran Muffins

Ingredients

  • 2 1/2 cups flour
  • 1 tsp. salt
  • 1 1/2 tsp. soda
  • 1 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 cups buttermilk
  • 8 oz. Raisin Bran (more to make thicker, if desired)

Directions

Put everything into a big bowl and mix well. Fill muffin tins 2/3 full and bake at 350 degrees F until done. This batter can be kept covered in refrigerator and used as desired for fresh hot muffins.

Recipe: Raisin Bran Muffins

Ingredients

  • 15 oz. Raisin bran
  • 3 cup sugar
  • 5 cup flour
  • 5 tsp. baking soda
  • 2 tsp. salt
  • 4 eggs
  • 1 cup oil
  • 1 qt. buttermilk

Directions

Mix dry ingredients. Add liquids and eggs. Stir well until mixed. Bake at 350 degrees F until done.

Recipe: Raisin Bran Muffins

Ingredients

  • 4 1/3 cups raisin bran
  • 1 1/2 cups sugar
  • 2 1/2 cups flour
  • 2 1/2 tsp. soda
  • 3/4 tsp. salt
  • 2 eggs, beaten
  • 1/2 cup oil
  • 1 tsp. vanilla
  • 2 cups buttermilk

Directions

Beat eggs and add oil and vanilla. Add egg mixture alternately with buttermilk to dry mixture. Bake in muffin tins 20 minutes at 350 degrees F. Makes 2 1/2 dozen. This will keep in refrigerator up to 6 weeks. Note: If no buttermilk is available, add 1 tablespoon vinegar to 1 cup milk for each cup needed.
