Potato Puffs

I used all left over mashed potatoes to make potato puffs.

I season the mashed potatoes up with garlic powder, minced onion, salt and pepper. I then combine the potato mixture with cracker meal, and one egg until it can form a ball.

I then take balls of potatoes and fry in oil until golden brown.

They are yummy!

These potatoes are also good if you slip a small chunk of cheese in the middle of the ball before fying; Italian peppers add a zing if you add them in the middle as well!

Are these the same thing as potato pancakes? If so I just wanted mention that with the potato pancakes to make sure that your potatoes are chilled - like left over from the night before. I don't know exactly what difference it makes, but I have found they just don't work worth a crud hot. Also I use a little flour in mine. Haven't ever tried cracker meal.
