Crock Pot Vermont Baked Beans
- 1 1/2 lb. yellow eye beans
- 1 medium onion, quartered
- 1/2 lb. salt pork
- 1/4 cup sugar
- 3/4 cup maple syrup
- 2 tsp. dry mustard
- 1/2 tsp. pepper
- 1 1/2 Tbsp. salt
Soak beans overnight in cold water in large saucepan. Bring water to a boil. Place onion in crock pot. Add beans and salt pork. Combine remaining ingredients with 1 pint boiling water. Pour over beans, adding more water if necessary to cover. Cook on low for 7-9 hours.
