I am looking for a baked spaghetti recipe that uses olives and fresh bell peppers. I want to make several for friends that are in need of a little break from cooking.

Thanks!

Put the rest of the spaghetti on top of that and put rest of ingredients on top, including spices and as much garlic as you want. Bake for 30 minutes (12/02/2006)

RE: Baked Spaghetti

Make a basic macaroni and cheese recipe. Fry off some sliced bell peppers with garlic and just before soft add sliced olives. Mix this into the mac and cheese and place into oven proof containers. I use the disposable aluminum ones with 'cardboard' lids. Once cool place in the freezer until needed. heat the oven to 180 degrees C - remove the lid and bake until heated through. Add grated cheese to the top before baking for a more cheesy pasta. (12/03/2006)

Ingredients

  • 1 lb. spaghetti, prepared to package directions
  • 1 large green pepper, chopped
  • 1-2 onions, chopped
  • 3 tomatoes, chopped
  • 1 clove garlic, pressed
  • 2 teaspoons Italian spices (oregano, basil)
  • 4 slices white bread
  • 2 cups sharp cheddar cheese, shredded
  • butter
  • salt and pepper to taste

Directions

Preheat oven to 350 degrees F. Prepare spaghetti according to package directions, drain and set aside.

In a large skillet, melt about a Tablespoon of butter, and saute the garlic. Add the peppers and onions and cook until they begin to get soft. Add the tomatoes and simmer for a couple of minutes. Stir in Italian spices. Remove from heat.

In a 9 x 13 inch greased casserole dish, put the drained spaghetti. Top with pepper, onion, tomato mixture. Top with shredded cheese.

Butter the bread on both sides. Cut into cubes. Sprinkle bread cubes over the top of the casserole.

Bake in 350 degrees F oven until bread becomes browned, and the cheese has melted. Serve with butter, salt and pepper.
