Mexican Tater Tot Casserole

Ingredients

  • 1 medium onion (chopped)
  • 1 lb. hamburger
  • 1 jar salsa
  • 2 packages cheese (shredded)
  • 1 can refried beans
  • 2 packages of tortilla shells (small ones work best)
  • 1 can enchilada sauce
  • 2 cups of crushed tortilla chips
  • 1 bag of tater tots

Directions

Brown hamburger and onion until no longer pink and onions are clear. In a separate sauce pan, cook on medium-low the salsa and enchilada sauce. Open can of beans and put in a microwave safe dish and heat until warm. Take out your cake pan or glass baking dish. Pour enough salsa mixture on bottom of pan, just enough to cover the bottom with a thin layer. Then you just layer tortilla shells, paste on beans with back of spoon enough to cover the tortillas. Then add a few spoonfuls of meat then add some shredded cheese. Keep layering until all ingredients are used. Then you sprinkle your crushed chips on top of the casserole top with remaining cheese, top off with tater tots and bake in oven 450 degrees F for 25 to 30 minutes.

Do you use the rest of the salsa/enchilada sauce mix in the recipe at all?

Actually you can layer the tortillas they do overlap a bit! You use a large cake pan and you can put 2 across and one in the middle. I forgot to mention that I also use taco seasoning mix with the hamburger! Any other questions please ask! It is really delicious!

I think you place one tortilla at a time, then beans, then some meat mixture, then some cheese and repeat this until you use all your ingredients. Thats how I am going to do it. Sounds Yummy!
