Baked Honey Mustard Chicken

Easy and so very good.

Ingredients:

  • 4 chicken breasts
  • 4 or 5 red potatoes (cut in half)
  • 1/3 cup honey mustard
  • 1 tsp seasoned salt
  • pepper
  • 1/2 tsp. thyme
  • 1/2 tsp. Italian seasoning.
  • Olive oil

Directions:

Combine honey mustard and 1/2 teaspoon seasoned salt and other seasonings. Spread on the chicken. Place in a 9x13 inch baking pan. Add potatoes to pan and sprinkle with 1/2 seasoned salt and pepper. Drizzle olive oil over potatoes.

Bake in preheated oven at 375 degrees F for about 1 hour. Stir potatoes half way cooking. Done when potatoes are soft. Enjoy!

Easy and so yummy!

Deeli, I like my chicken really well done, guess if you don't like it well done, lowering the baking time is fine. Sometimes it can be cooked a shorter time, usually you can check it & see if it is done enough for a persons personal taste.

Your recipe sounds so yummy and I am going to definitely give it a try because of the ingredient flavor choices for both the chicken and the potatoes but am going to lower the baking time unless those 4 chicken breasts happen to weigh a total of two pounds ;-) The rule of thumb for moist and juicy chicken is about 15 minutes per pound at the temperature suggested here.

Recipe: Honey Mustard Chicken

Ingredients:

  • 1 fryer, cut up (about 3 lbs.)
  • 1/3 cup melted margarine
  • 1/3 cup honey
  • 2 Tbsp. mustard
  • 1 tsp. salt

Directions:

Lay chicken pieces in 9x13 inch pan. Pour honey mixture over chicken and bake at 350 degrees F for 1 1/2 hours.

Tip: Honey-Mustard Chicken

Here is a chicken recipe that is a hit; I'm asked for the recipe each time I serve it to friends or family:

Ingredients

  • 2 cups herb-seasoned dry stuffing
  • 3/4 cup hot water
  • 1/2 cup raisins or finely chopped apples
  • 1 Tbsp. margarine, melted
  • 4 boneless, skinless chicken breast halves
  • 1/3 cup fat-free mayonnaise
  • 3 Tbsp. honey
  • 1 Tbsp. Dijon mustard

Directions

Preheat oven to 400 degrees F and coat a 13x9 inch baking dish with non-stick cooking spray. In medium bowl, mix stuffing, water, raisins and margarine. Allow to stand for about 2 minutes. Spoon 4 mounds of the mixture into prepared pan and top each mound with a chicken breast. In a small bowl, combine mayo, honey, and mustard and mix well. Spoon over chicken. Cover dish with aluminum foil and bake for 25 minutes. Uncover and bake for an additional 5 minutes. To serve, spoon the sauce in pan over chicken and stuffing.
