Recipe: Delightful Broccoli Salad

Ingredients:
- 5 cups chopped fresh broccoli
- 1/2 cup raisins
- 1/4 cup chopped red onions
- 12 Tbsp. sugar
- 3 Tbsp. vinegar
- 1 cup mayonnaise
- 10 bacon slices (cooked crisp & crumbled)
- 1 cup sunflower seeds
Directions:
In a large bowl, combine broccoli, raisins and onion. In a small bowl, combine sugar, vinegar and mayonnaise. Pour over broccoli; toss to coat. Just before serving, sprinkle with bacon and sunflower seeds. Toss.

Ingredients:

- 10 slices bacon, cooked & crumbled
- 2 Tbsp. sugar
- 1 cup mayonnaise
- 1 cup sunflower seeds
Directions:
In a large salad bowl, combine broccoli, and onion. In a small bowl, combine sugar, vinegar, and mayonnaise. Pour over broccoli and toss to coat. Refrigerate. Just before serving, sprinkle with bacon and sunflower seeds and toss well. Serves 6-8

Cool crunchy and oh, so good!
Ingredients:
- 1 bunch raw chopped broccoli
- 1 lb bacon cooked and crumbled
- 1 med. red onion chopped
- 1 cup unsalted sunflower seeds
- 1/2 cup golden raisins
- 1/4 to 1/2 cup of grated cheeses (cheddar, longhorn)
Dressing
- 1 cup mayonnaise
- 1/3 cup granulated sugar
- 2 Tbsp. cider vinegar
Directions:
Mix the salad ingredients together in a bowl to hold it all.
Mix the dressing ingredients together and pour over the salad stirring to coat well. I like to wait about 1/2 hour to let the flavors meld together.
You may also switch nuts with walnuts chopped coarsely or even sliced almonds.

Clean and cut fresh broccoli florets to bite size. Add hard cooked eggs, salt, pepper, pickle relish, bacon bits or sunflower seeds, and miracle whip. Yum! :)

Recipe: Potluck Broccoli Salad

Get ready to double or triple this one, it's THAT good! Anything that makes me say "more please" to broccoli is a good thing. Note that the broccoli wilts down some resulting in less than you start with. I didn't get any the last time I brought it to a picnic!
Ingredients
- 5 cups fresh broccoli florets
- 1/2 cup raisins
- 1/2 cup sunflower seeds
- 1/4 cup of red onion, chopped
- 1/4 cup of red pepper, chopped
Dressing:
- 1 cup mayonnaise
- 2 tablespoons vinegar
- 1/2 cup sugar
Directions
Combine broccoli florets, raisins, sunflower seeds, chopped onion, and peppers in a large serving bowl. In a separate bowl or large cup, whisk together mayonnaise, vinegar and sugar. Add dressing to the salad and toss to mix well; chill thoroughly before serving. Best made the night before.
Broccoli salad serves 4 to 6.

Recipe: Potluck Broccoli Salad

Cut up in bite size pieces: Fresh raw broccoli cucumbers, lots of tomatoes, red onions, bag of coleslaw cabbage,or any vegetable you like and add to 1 cup of mayo or so with 2 Tbsp. of sugar-sweeten to taste. Add cooked bow tie pasta and summer sausage to spice it up. Sprinkle with shredded cheddar cheese and bacon crumbles, croutons, little bit of black pepper.

I love this salad, however as my husband doesn't care for raisins, I substitute dried cranberries. It also adds color as I leave out the red pepper. (09/08/2008)

Ingredients
- 1 lb. fresh broccoli, cut into florets
- 1/2 small red onion, chopped
- 1 cup shredded mozzarella cheese
- 8 bacon strips, cooked and crumbled
- 1/4 cup sugar
- 1/2 cup mayonnaise
- 1 Tbsp. vinegar
Directions
Place broccoli, onion, cheese and bacon in a salad bowl; set aside. In a small bowl, combine sugar, mayonnaise and vinegar; mix until the sugar dissolves and mixture is smooth. Just before serving, pour dressing over salad and toss.

Yields: 6 servings
Ingredients
- 5 cups fresh chopped broccoli
- 1 pound bacon - cooked and crumbled
- 1 cup raisins
- 1 cup mayonnaise
- 1/2 cup white sugar
- 2 tablespoons white wine
- vinegar
- 1 red onion, chopped
- 1 cup sunflower nuts
Directions
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
In a large bowl, combine the broccoli, bacon, onion, nuts and raisins. Whisk together the mayonnaise, sugar and vinegar. Pour dressing over broccoli mixture, toss and refrigerate.
This tastes just like the Broccoli salad sold at Super Wal-Mart deli's

I make this, but leave out the fresh onion (I use onion powder, it's faster and doesn't make me tearful) and don't use quite as much bacon. I also, use red wine vinegar, that hubby and I both prefer. We love this stuff! It goes over very well at potlucks!! (10/24/2006)

Dressing:

Chop all vegetables and add dressing.
