I found exactly what you are looking for in an antique store and paid under 5.00 for it. Check out those places if you cant find a 3 blade spring chopper anyplace else.

Vermont country store has a foley food chopper for sale...It's not from Foley, but looking at the picture it looks just like one (three blades, spring in center, handle, etc.). It would be worth a look at least. For a vintage one, my suggestion is eBay. For a new one like a Foley, then perhaps Vermont Country Store (http://www.vermontcountrystore.com). Good Luck.

EBAY IS THE PLACE. THEY CAN BE LISTED AS FOLEY CHOPPERS, 3 BLADE CHOPPERS, OR VINTAGE CHOPPERS.

I did a search for "Foley Food Chopper" on eBay and received 2 hits. I don't know if this is what you're looking for, but both of these food choppers has 3 blades. One is in better condition than the other. Each has an opening bid of $2.99. The links are:
