Campfire Foiled Chicken Dinner

This is a favorite summer meal.

Ingredients:

  • 6 chicken breasts, precooked at home
  • 6 carrots, sliced lengthwise and parboiled
  • 1 onion, sliced into 6 slices
  • 6 small potatoes, sliced lengthwise and parboiled
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 4 Tbsp. butter

Directions:

Boil chicken breasts for 20 minutes at home. Place breasts, carrots, potatoes, 1 onion slices, soups and pat of butter on 6 squares of heavy duty aluminum foil, dull side out. Seal tightly and freeze until needed. At campsite, bury packets in hot coals. Cook 30 minutes, turning once or twice until veggies are tender. Makes 6 servings.

Recipe: Chicken in Foil Dinner (For One)

Ingredients

  • 1 chicken leg or thigh
  • 1 med. potato, cut in fourths
  • 1 med. carrot, cut in 1/4 inch slices
  • 1 individual serving instant cream of chicken soup
  • 1 individual serving instant onion soup
  • 1/2 cup water
  • 1/2 cup green beans

Directions

Place chicken in center of 18x15 inch piece of foil; place potato on side of chicken and the carrots on the other. Mix instant soups with water until thickened and spoon over chicken. Top with green beans. Wrap securely and place on ungreased cookie sheet. Bake at 450 degrees F for 50 minutes.

Note: This recipe is written only for 1 person, but could be done for more and you could substitute round steak for chicken.

Hi, I make a similar recipe. We use a big hamburger patty(browned) and corn instead of the greeen beans. My kids called them "Hobo Bags" as I would pull up the foil to look like a knapsack. (10/25/2006)
