Mocha Brownie Pies
- 1/2 cup + 2 Tbsp. hot water
- 1 1/2 Tbsp. instant coffee granules
- 1 package brownie mix (21 oz.)
- 1/4 cup vegetable oil
- 1 egg
- 2 purchased chocolate graham cracker pie crusts
- 1 package cream cheese, softened (8 oz.)
- 1/2 cup sifted confectioners' sugar
Preheat oven to 350 degrees F. In a small bowl, combine hot water and coffee granules; set aside. In a large bowl, combine brownie mix, oil, 1/2 cup coffee mixture and egg. Mix until dry ingredients are moistened. Spread half of batter in bottom of each pie crust. In a medium bowl, combine cream cheese and confectioners' sugar; beat until smooth. Beat in remaining 2 tablespoons coffee mixture. Spoon cream cheese mixture evenly over brownie batter in pans. Carefully swirl with a knife. Bake 28-31 minutes (do not over bake). Cool 10 minutes before serving. Serve warm or cool completely on a wire rack. Store in an airtight container in refrigerator.
